Elderberries are dropping! Time to grab your harvest basket and tap this flow of immune boosting goodness. Learn to ID and harvest this nutrient-dense, dark-jewel-of-a-berry.
These hardly sweet, slightly acid, mineral flavored, nutritious berries (high in iron and bioflavonoids) are food; but their fame is due to their immune stimulating and anti-viral properties. We consume them to keep colds and flus at bay. And if we do get sick, they can help us move through the illness.
Elderberry, scientifically called Sambucus canadensis of the Adoxaceae family, is a native perennial shrub of North America. It is closely related to Sambucus nigra (a European native). These two species can be used interchangeably and are found throughout the world. Hardiness Zones (USDA): 3-10.
Use the fully ripe berry cooked in dessert, fruit sauce, soup, stews, syrups, infusions, etc. Or dry or freeze for future use.

You’ll find this prize of a bush growing in full sun to part shade in damp, humus-rich soil, along stream banks, ditches, fields, hedgerows, woodland edges, and gardens.
Key Identifying Features:
Shrub size: 6-12’ tall by 6-12’ wide
Opposite leaf arrangement
Leaves pinnately compound, w/ 5-11 leaflets, usually 7
Leaflets lance to egg (ovate) shaped
Leaflet margins sharply toothed (serrated)
Elongated pointy leaflet tip (acuminate)
Young bark: smooth, green w/ warty bumps (lenticels)
Older bark: smooth, grayish tan w/ warty bumps (lenticels)
Branch cross section has white pith
Fruit grows in umbel-like clusters
Fruit color when ripe is purple black
Fruit width: ⅕ inch wide (but can be bigger)
Fruit contains 3-5 seeds (this specimen seems to have 4)
Cautionary Notes:
Since elderberries stimulate the immune system, they may be contraindicated for certain overactive immune systems / conditions. In all matters of your health please defer to the advice of your chosen healthcare professional.
All parts of the elder shrub-except flower and ripe fruit-can cause nausea, vomiting, diarrhea; occasionally, even raw, ripe berries can cause nausea (although never experienced by the author after several years of consumption). Still, it is best to consume ripe elderberries cooked.

I LOVE ALL OF YOUR CONTENT! So inspiring! I am having trouble identifying two particular elderberry bushes on my property. They walk, talk, have all the right leaves, bark and Berries, but the Berries come from very green peduncles, not red. Are they safe to eat?

Thank you for a great introduction to elder! I bought two bushes to plant this year. One already has ripe berries, so I made syrup from the elderberries. So great to have on hand to boost the immune system!

Great video and close ups. My two year old elderberry is dropping most, if not all of the nice green berries...😢 It is well watered, (not saturated, of course,) no bird damage that I can see, so it must be one of those things that happens. (Patience... patience...)

The park I walk at has quite a few elderberry shrubs off the main paths. I could’ve smacked the maintenance guys though. They cut down one that was very well established, at least 8’ wide & 7’ high. There’s definitely way more berries than last year & ripened at least 2 weeks earlier(I’m in NJ). I have 2 quart bottles full & ready to tincture 💜

Wow it resembles black walnut leafs, thank’s Na Na… 😆 Um… side note do you have anything on crabapples….. small & red smaller than a tangerine, wild life love this tree last year I tasted an apple thought it needed a week more came back tree top to bottom, left to right, striped nothing on the ground…..

Yes, elderberry and black walnut have pinnately compound leaves. Sounds like the crabapple you encountered was a Dolgo variety (maybe). They are lovely. If you like a crab's flavor, I suggest eating it.

If you dry them and then make a powder, is there a toxicity issue with the seeds? I took half my dried berries and made a tincture. I then made a powder with the other half. I'm thinking a tsp. steeped in water for tea, would provide the same benefits, while the tincure gets ready. But the seed toxicity question arose in an herb challenge Im working on. Your thoughts please?

Good question. If you cook the fully ripe and dried berries, by adding boiling water to them, to make tea, you should be good. Cooking elderberry neutralizes the toxicity. Hope this helps.

The first time I got to know elderberry, I was quite hungry in the forest... So I startet eating them as is and it was so delicious! Though there came a very clear message from my body at some point to STOP and I could feel a nausea coming on if I ate more...The body knows when it's enough :)
