Meghna's Food Magic -
Banana cake is a cake prepared using banana as a primary ingredient and typical cake ingredients. It can be prepared in various manners, such as a layer cake, as muffins and as cupcakes. The batter is slightly hard & cake will not rise much. You may add Walnut or Almond; & it’s best for High Tea or Coffee. 💋💋💋 Love M. #ChefMeghna #BananaCake #CoffeeTime #HighTea
Ingredients:
3 Riped Bananas
3/4th cup sugar (half Castor sugar and half Brown sugar)
1/2 cup vegetable oil
1/2 tsp vanilla essence
3/4 cup Maida
3/4 cup wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon powder
A pinch of salt
Some walnuts (chopped in big chunks)
Icing sugar for dusting
Method:
Preparing wet ingredients-
Take three ripped bananas in a bowl.
Mash them with a fork.
Add 3/4th cup castor sugar.
If you want less sweet than replace half of the castor sugar with brown sugar.
Take 1/2 cup oil. Take odourless oil.
Mix nicely with a spatula.
Add 1/2 tsp Vanilla essence.
Too much vanilla essence can overtake the cinnamon flavour; hence take less essence.
Preparing dry ingredients-
In a bowl, take 3/4th cup Maida & 3/4th cup Wheat Flour.
Add 1 tsp baking powder & 1 tsp baking soda.
Add 1 tsp cinnamon powder
Add a pinch of salt
Mix them well.
Pre-heat the oven 180 degree for 10 minutes.
Baking time 35-40 minutes.
Mix dry ingredients into wet ingredients.
Mix with cut & fold method.
Mix chopped walnuts.
Thick batter is ready.
Take a bread pan to bake banana bread.
The bread pan should be lined and greased.
Fill the cake batter up to 3/4th level of bread pan.
Bake the cake for 40 minuets.
Take out of the oven and let it cook down.
Take out the cake in the parchment paper.
Remove the paper.
Dust some icing sugar on top.
Slice & serve the Banana Walnut Cake.
Enjoy with coffee.

Megha I just love you. Today is my son's birthday. I was baking for the first time and wanted something very light yummy and healthy. I tried this cake and my son, husband, my in laws and all the guests were like all praises for me. This was a real hit and I m gonna bake it again after three four days on my family's request.. Thanks so much...used ingredients perfectly as mentioned ...only change was to add jaggery instead of sugar and I took whole wheat flour not maida...still it was turned out delicious...must try..also added dark chocolate n walnuts

@@dominoesfreak9940 no changes... only used whole wheat flour and used only powder white sugar as I don't have brown sugar. While using powder white sugar I keep it slightly course to get the desired texture

Ingredients quantity is not mentioned. Half a cup or 1 cup cannot be same for everyone. It's better to share grams. But I did all measurements as per your recipe using a single cup and it really turned out very well. Thank you so much for sharing the recipe.❤

Like your speaking style. Do you bake low-fat and low sugar foods? I’ll try this bread with natural sugar, ripened bananas are high in natural sugar.

If we use coffee powder or cocoa powder , can we use cinammon powder in this receipe. Can we use curd for leavening or not required in banana cakes. Can we use flex seeds powder in this receipe. No acid medium like curd or venigar or limejuice is used for bak.soda to react with.

Mam can i use only all purpose flour (maida) in this cake... Nd I think 1/2 cup oil is little more... Please clear my doubts

Hi Meghana.. i made the cake .. used same measurements.. used half tea spoon of soda instead of one tea spoon.. used obe cup sugar instead of 3/4 cup.. rest all same same..i pre heated the oven.. my cake was baked but still see small portions uncooked here and there.. bottom thin layer was not cooked .. i dusted with floor and didn’t use greased paper.. what could be the reason? But thanks for a wonderful recipe.. please reply

pl clarify. Number of bananas is decided based on the eggs required. For 1.5 cups of flour , 3 eggs are required and to replace the same , 1 1/2 bananas or 2 is reqd. What is the deciding factor for 3 bananas. And bak.soda can be reduced to 1/2 for 1.5 cups of flour instead of 1 tsp. Pl comment

Do you have any video on Aaloo kulcha? I tried with Maida, Oil, Baking soda, Baking Soda, Curd, and kept it for 2hrs but it came out like a maida roti. I watched many videos on KZfaq but nothing worked when we try at home.

@@MeghnasFoodMagic thanks a lot! Please use the same ingredients which we normally get from market. I checked with one of the Baker and he said that they get different maida with gluten which we don't get usually from market.

Hi mam. Instead of aluminium tin for baking can silicon mould be used? Should parchment paper be used or can the batter be poured just in the mould? Is the temperature same for baking?

Its the standard normal tim that they sell in market. But size of tin is not an issue; fill the cake mix as per ur tin size
