This is PROPER cacik. You might know as tzatziki, or a cucumber and yoghurt dip, and that REALLY stresses me out!
What it really should have in it is lovely thick yogurt, finely grated cucumber, mint, olive oil, lemon juice, salt and garlic.
Try this recipe of mine and you’ll never want to go back!
Ingredients
300g natural strained / thick set yoghurt (you often get this from international / Turkish grocers) OR thick Greek yoghurt (full fat is best as it’s creamier but low-fat ok if you prefer),
1 large finely grated/crushed garlic clove,
1 heaped tbsp dried mint,
1/2 tsp salt,
The juice of 1/2 lemon,
1/2 tbsp extra virgin olive oil.
The Method
Add the yoghurt, garlic, dried mint, salt, lemon juice, and olive oil, to a bowl, then the strained cucumber.
Stir, taste (add a little more salt if necessary), then place in fridge for an hour or so for the flavours to amalgamate before serving.
Serve with an extra drizzle of extra virgin olive oil and dried mint

as a Turkish woman i approve this =) on a personal level i like to drop a few drops of grape vinegar in to cacık. red pepper also works.

Dearest lady Meliz - I feel like a miracle has come my way. I have had proper Turkish Cacik, tried to replicate and searched online for a recipe, to no avail. Tzaziki is there & some variations of Cacik (some using mayonnaise - which I could never stomach). Typed in search for thick cacik & your block appeared. You have made me the happiest man in all of Cumbria! I am on my way to copy your recipe, after I strain my quality Greek yoghurt - it will become the Yoghurt the Turkish people gave the world! You have finished the puzzle for me. Strain, lemon juice and dried mint. Sending you much thanks, love & best wishes. David.
