Masterchef John Zhang shares the tips on how to make this popular authentic cantonese dish, Crispy Fried Duck with Taro, 荔芋香酥鴨, to experience 4 layers of different texture that melts in your mouth all in one bite.

The recipe features moist duck wrapped in a blanket of mashed taro root. The whole thing then gets deep-fried to provide flavor and crunchiness. The nuttiness lent by the mashed taro gives an extra layer of flavor to the boneless duck. It's crispy on the outside and soft on the inside that melts in your mouth.
Traditional Cantonese cooking is celebrated in China for its subtle and refined flavors. This is the real Kung Fu dish and takes a lot of time to prepare. To embrace the authentic Chinese cuisine, we hope the techniques and recipes can be pass down from generation to generation.

Perhaps begining monday for eat only sunday..in the evening Monday= look the chef video 1000 times and write the list of ingredients.and matériels Tuesday go.buy the list( but you have to go.in 5 différents store or 10... Wenesday: go to asiatique store to buy the vegetal ( like you dint know the name ...you .say " you know the stuff white inside ... hard on the exterieur " -"no sorry madame we dont have vegetables like this here" Friday.. ... we get up.a 4 am this day you try to understand how use the new.cook asiat but you burn.it. All.the day you clean the kitchen SoWenesday you return buy the cook.asiat.and past 4 houres to understand jow to use it in the store Satuday you began to.cook And if you be lucky sunday its ready to eat. Feel like to clarify something. The "white wine" chef uses is not the wine from white grapes, but Chinese white wine made with crops (mostly rice).

Wok stoves need to have water running over the surface to keep them from overheating and warping.. Standard wok stoves use 1.2 liters (40 ounces) per minute. The new "waterless" wok stoves use 90% less. Chinese restaurants use vastly more water than any other restaurant so their water bill is very high. You learned a new bit of trivia today.

Robi Esse Actually depending on different styles and genres the technique varies a lot. And not every dish is fried. There should be some purposes that the dish is chosen to be fried, for example to make the meat tender and juicy inside crispy outside.

Ive read alot of cookbooks, eaten in alot of restaurants and watched hundreds of videos but never seen this one...so intriguing! Yes you would need to have time to do it but looks so good

So that's how this is made....order this all the time at our fav restaurant & didn't know it required so many steps. Simply delicious. There is a dipping sauce that accompanies this but not shown here.
