Pickle recipe
- 500 ml of water
- 165 ml of vinegar
- 20g of sugar
- 10g of salt
- 10 peppercorn, 5 allspice, 4 bay leaves, chili (optional)

Thank you for the cooking lessons! I have often read in recipes that you should make the pan hot first. What is the reason you put the duck in a cold pan?

For the duck is better to start on the cold pan so you can melt the fat better

I will think about...problem is restaurants are not really using chicken thigh because there are not really nice on the plate 🤭

@@ChefMajk it is just example of cheap cut of meat. Remember watching one of master chefs and one women did like press boneless chicken legs. She won only because her rival was using filet steak. Its more difficult to make nice dish from cheap meat than having expensive one

Its amazing how different parts of a chicken can vary so much in terms of prices in different places... in my country chicken breast is the cheapest but chicken thigh is expensive

For the puree for example you no need any recipe just roast your mushroom and then put little bit of cream and try to blizt it. If is too heavy put more. And that is it. Then you can adjust consistency of the puree how you like. This way you gonna understand what is going on with puree much more at just using recipe.

You have to do it in right order. Or just put it inside the oven for minute before you plate it.

Hey chef Majk! I noticed that whenever you roast veggies or meat, you always use vegetable / sunflower oil instead of olive oil... why is that?

For me that is a basic option. I should rather ask why you need olive oil which is more expensive and primarily useful for cold use as salads etc.

Parsley root and parsnip look similar but taste very different. Also, parsley root is much slimmer than a parsnip. This is a learning experience for many people who are unfamiliar with the parsley root. It’s okay to ask questions, that is how we all learn. 😉

Hmm ... this is a long cooking process. How does one handle the sauces and mushrooms and other ingredients that have cooled down by the time you're done with everything? It's not like we've got a warm plate at home, like the restaurants do. How should one handle this aspect at home ?

You should blanch some tomatoes, peel the skin an deep fry the skins. Makes a nice edible garnish.

What I feel misses is the actual "pick-up" of the dish. You show the things you did in advance which is awesome, but how do you then bring them back to temperature to serve. Particularly let's say you are having a dinner party with 8-10 people. :) That would be super helpful for me, but your videos are really nice!

restaurant trick is to put ur plates in the oven at low temp, itll keep the food warm when you serve it. Things like crisps kept airtight, pickles are okay room temp. Sauce can be reheated and only finished with butter before serving, puree in squeeze bottle as well reheated in warm water. Meat has to rest so u have time to reheat everything else

Like Lim already answer, crisps and pickled are cold, puree stay in bottle warm, then you have cabagge in the pan hot so just parsley you can put moment in the oven and then just care about a meat. If you do dish like this for more people you have to be organised and get equipment for that.
