Theory: Raden was conscientiously grilling the yakiniku because this is a rare expensive meal for her and she would rather die than allow such precious food to not be cooked to its best state.

Iirc, She was a model once (need confirmation, which would explain her smoking, drinking and gambling, stress that comes with the territory), and a certified art curator who gives talks to schools etc. Yeah, she's leagues ahead compared to others, a professional. She's even been to France, with no prep or any bg in French. She has that go getter and passionate attitude.
