We put a thiolized yeast using one of the most simple recipes we could think of - a SMASH beer - to really highlight the difference between a regular ale yeast and its thiolized variant. The brew was brewed with 100% North Star Pils malt and Saaz hops in two additions for bittering and flavor/aroma, then split into two five-gallon batches. Half fermented with Omega OYL 004 West Coast Ale I and half fermented with OLY 404 Star Party (the thiolized version of 004). The resulting effect between the two yeasts on flavor and aroma is huge! #homebrew #thiolizedyeast #fermentation

Thiolized SMASH Recipe (for 10 gallons)
- 22 lbs North Star Pils
- 1.5 oz US Saaz (60 min)
- 3.0 oz US Saaz (5 min)
Mash grains at 152F for 60 min. Run off and collect wort.
Boil 75 minutes. Add hops as noted above.
Chill wort to 68F and transfer into two sanitized fermenters.
Pitch yeast: OYL 004 West Coast Ale I into one fermenter and OYL 404 Star Party Ale into the other. Ferment at 68F.
Once fermentation is complete, package beers and enjoy a unique side-by-side tasting experience.
