Mid-Autumn Festival is fast approaching and the best way to celebrate the auspicious occasion is to enjoy the day with a good old traditional baked mooncake - one with an egg yolk or egg yolks, of course. The savory salted egg yolk cuts the greasiness and sweetness of the overall mooncake. This combination tastes just heavenly.
These mooncakes are not at all difficult to make, especially with commercially available lotus seed paste. For those who are more ambitious, try making your own lotus seeds paste. It’ll be worth it, as homemade lotus seeds paste can be really delicious and you can also control the sweetness of the mooncakes to your own liking. And, more importantly, they are only just a fraction of the cost of those sold commercially.
For this mooncake recipe, we’ll be using the mini sized mooncake moulds (70g) to make the mooncakes. These mini lotus paste mooncakes looks so wonderful and make great mid-autumn festival gifts as well! Not to mention, these mini mooncakes are definitely popular among the younger ones too. As usual, enjoy!

Tips: I soaked my lotus seeds overnight because it was really hard to peel, I used 3 hours to peel all🙈. So when it comes to blending please don’t forget to add 1 cup of water because it was unblendable without any liquid and don’t worry it will not be runny atall. So a mini secret, if you can get a hand on “peanut oil” in your local asian market please do it, it gives it the best aroma just like the mooncakes you buy! Unfortunately, I didn’t have so I added 1tbsp of peanutbutter to the paste while on the stove and turned out amazing! Also I add a bit of sea salt and 1/4 cup less sugar. This was a super delicious recipe and easy to make! Second year making it

+Lilian Tay yes, mooncakes need to be left aside for a few days before consumption to allow the oil in the filling to be released and gives the skin a more shiny and soft texture.

Alkaline water can be bought in most Asian grocery shops. Its not drinking water. The baking time is 2 phase. Bake for about 10 to 15 minutes (until golden brown). Then allow to cool for about 15 minutes, eat wash and continue to bale for another 5 to 10 mins.

Thank you for your reply, I ordered the mould cake from Ali express, they just arrived this morning, still wait 2 more mould cakes, I made salty duck eggs myself, my question is how can I get the salty eggs like you have ? Should I boil it the egg ? Or is there any other way to get the same result as yours ? Thank you

Hi, my salted eggs are store bought. I just remove the outer charcoal coating, wash the shells clean, crack to get the yolks and bake the egg yolks.

Hi, if i dont have alkaline water, what else can i use? What mould size (gm/weight) are you using. I have mine is 50gm, if i am using only lotus and skin, hows the ratio in gram like?? tq

+Tuppy Tan I am afraid there is no substitute for alkaline water. You can still do without, but the mooncake skin colour may be a bit pale and less fluffy. The mould I use is 70g (its on my website ). I use 4:6 for skin:filling so if your mould is 50g, then it will be 20g skin to 30g filling. For thinner mooncake skin you can use 3:7 so its 15g skin to 35g filling. Hope this helps. Thanks for viewing.

Yes, you can use other neutral oil. Peanut oil just enhance the flavour. You need not add egg yolk if you don’t want. Just increase the amount of filling (paste) equivalent to the weight of the salted egg.

+richard chua not sure if it has a different appearance but I think its not advisable to use other oil except vegetable oil when making lotus paste so that you get to taste the fragrance of the lotus seeds in the paste. Hope this helps!

Hi there, I failed with my traditional mooncake 🥮 maybe because the pastry dough is too soft, when baked in the oven it just melted at the edge. Why? Another question is, I didn’t put salted egg yolk, so do I need to adjust, the weight for my filling? I’m using 45g measurement fir now. The temperature I set is 170c fan assisted, is it too hot? As according to yours you set your temperature to 190c is it fan assisted ? Sorry for the long questions and thank you for your time.

What do you mean by melted at the edge? If you didnt put egg yolk in the filling, you need to add more paste for the filling equal to the original weight of the filling. As for the oven heat, perhaps you can use 180 C for the mini mooncakes as everyone’s oven is different.

+Lilian Tay the mooncakes need to be set aside at room temperature for a few days to allow for the mooncakes to soften and brown before consumption. Perhaps after a week or so you can just keep in the fridge if not consumed. Be sure to remove from fridge to let it come to room temp before consuming. Enjoy!

Slight crack is fine. When leave for a few days, the crack should disappear as the oil is released to the surface. Was the oven temperature too hot? As everyone’s oven is different.

The maltose gives the lotus paste a sticky and shiny texture. You can reduce a little but not too much.

If you are using a 50g mold, use 20g skin and 30g filling. Should not be too sweet. If you are adding salted egg, then deduct from the 30g filling. Hope this helps to explain. Thanks

hi.. i watch you 2 video of mooncake. i want to ask, why the bigger mooncake has different method. you said the skin dough should be rest for 4 hours then later you knead rest of flour. why in this recipe you didnt do same? is the size matter?
