Mint Coconut Chutney / Pudhina Chutney
This Chutney is very versatile as you can not only have it with your Idli, Dosa, Vada, but also can be applied on bread and had as a refreshing and spicy sandwich. Lace you bread with a little butter too, to get that yummy feeling. Pudhina Chutney it is for this weekend folks.
Ingredients :
1-1/2 cup Freshly grated coconut
1 Tablespoon Channa Dal - dry roasted on a pan.
2 Nos Green Chillies
1 inch Ginger
Ball sized tamarind
Two handfuls of mint leaves
Some coriander leaves
½ tsp Jeera /Cumin seeds
½ tsp mustard
½ cup water
For Tempering :
- 2 tbsp oil
- ½ tsp mustard seeds
- ½ tsp urad dal
- 1 dried red chilli
- Few curry leaves

Method :
Dry roast channa dal and keep aside. In a grinder grind to gether coconut, channa dal, green chillies, ginger, tamarind, mint and coriander leaves, cumin seeds, mustard seeds, salt.
Grind coarse and remove in a dish.
In a pan add little oil and temper mustard seeds, urad dal, red chilli and curry leaves. Add to the chutney and mix.
