Wow, I'm SO glad we did this incredible gourmet food experience in Xochimilco. Xochimilco is located in Mexico City, Mexico and is a popular spot for tourists and locals. Commonly referred to as "Mexico's Venice", the canals at Xochimilco are an experience that can take you back to old Aztec farming methods with chinampas, axolotls, and trajineras!
Come along with us as we learn about their sustainable farming methods, eat gourmet food prepared by one of our favorite chefs in Mexico, and get a little bit tipsy (:

As a vegetarian, I never had a problem eating no animal-based dishes while visiting Mexico, but, in Xochimilco, the gastronomical experience was wholesome. Amazing. Pretty much any food vendor (in their skinny floating kitchens) would have something exquisite to offer. All I have to say was 'no carne animal, solo vegetales', and they immediately start reciting their menu with fully vegetarian dishes. A good friend of mine, who happened to be a Mexican Anthropologist, mentioned once that the original diet of the ancient inhabitants of the Anahuac (the huge basin with the 6 lakes that now is Mexico City, Xochimilco one of them) was mostly vegetarian, and that their dishes are still nowadays served in Mexico City. Mostly in high-end 'Nouvelle Cuisine' Restaurants, and even in small street food stalls throughout the Metropolis. In my experience, Mexican CuisineS are the richest in Vegetarian Dishes in the whole World (and I have lived in many places around the Globe). I'm glad to know modern Chefs are using ancient Mexican Gourmet knowledge to feed and delight the newest generations. Enjoy your trip kiddos, but I have a warning for you: Mexico is an addiction very difficult to rid of... If I know it. Cheers from New York City!

Google Translate: Como vegetariano, nunca tuve problemas para no comer platos a base de animales mientras visitaba México, pero, en Xochimilco, la experiencia gastronómica fue saludable. Increíble. Prácticamente cualquier vendedor de comida (en sus delgadas cocinas flotantes) tendría algo exquisito que ofrecer. Todo lo que tenia que decir era 'no carne animal, solo vegetales', y de inmediato comenzaban a recitar su menú con platos completamente vegetarianos. Un buen amigo mío, quien resultó ser un antropólogo mexicano, mencionó una vez que la dieta original de los antiguos habitantes del Anáhuac (la enorme cuenca con los 6 lagos que ahora es la Ciudad de México, Xochimilco uno de ellos) era mayoritariamente vegetariana. y que sus platillos todavía se sirven en la Ciudad de México. Principalmente en restaurantes de alta gama de 'Nouvelle Cuisine', e incluso en pequeños puestos de comida callejera en toda la Metrópolis. En mi experiencia, las cocinas mexicanas son las más ricas en platos vegetarianos en todo el mundo (y he vivido en muchos lugares del mundo). Me alegra saber que los chefs modernos están utilizando el conocimiento gourmet mexicano ancestral para alimentar y deleitar a las nuevas generaciones. Disfruten su viaje niños, pero les tengo una advertencia: México es una adicción muy difícil de eliminar ... si lo sé. ¡Saludos desde la ciudad de Nueva York!

This is very true! Sometimes the absence of vegan restaurants in a small town is a little scary but when you go into a little restaurant and eat the simplest of foods by a cook that's been making it for years, you have such a great meal and all plant-based. In Mexico City, you see so much appreciation and even innovation of ancient foods in Mexico. It's very exciting! Thank you so much for your insight!

Many years ago there was a great restaurant near the Museo de la Academia behind Mexico City's gigantic Gob Palace (2nd largest in the World, after the Caserta Palace in Italy). I can't remember it's name, but it was amazing. It specialty was the local cuisine of the people of the Anahuac (the basin and lakes, of what's now Mexico City), and to my surprise, most dishes were vegan or vegetarian. All exquisite. Not cheap, but so much worth it. Ask the local, I hope it's still in business. Another one was CAFE TACUBA in Centro,, and of course, HACIENDA LOS MORALES in Polanco. Once a year the great 'Maxim's', 'Les Mustaches', 'Le Fouquets d' Paris', and many other amazing French Restaurants in Mexico City would offer a week of 'French interpretations' of Mexican Dishes, and once again, a great deal of Vegetarian Dishes, honoring the traditional local Cuisine on Mexico. I don't know if the annual festival it's still done, but it's worth trying to investigate. Mexico City is one of the great capitals of the World, and its CuisineS are one of the main attractions for many. Enjoy your stay. Have fun. Cheers

Hola chicos me emociona muchisimo esta decision que han tomado de vivir en una ciudad muy cosmopolita y que muestran a traves de sus videos una realidad muy diferente a lo que los medios tradicionales nos tienen acostumbrados y los contenidos de sus videos son la prueba de que en Mexico tambien se vive a gusto. Hello guys! I am very excited about this decision you have made to live in a very cosmopolitan city and that you show through your videos a reality that is very different from what the traditional media have us used to and the contents of your videos are proof that in Mexico is also lived at ease.

uff, xochimilco es tan antiguo , como los es el basamento piramidal de cuicuilco. Hay colegas que dentro de sus trabajo sugieren que los xochimilcas son contemporáneos de los teotihuacanos. Lo que significaría, sin duda alguna , entre muchas otras cosas , que xochimilco fue un gran asentamiento poblacional ,de gran importacia , y que fue parte medular en la configuración de una sociedad que alcanzó el esplendor en el post clásico temprano. Es decir , Si hablamos del origen de la cultura en la cuenca del valle ,indudablemente tendríamos que comenzar por hablar de los primeros grupos asentados en las orillas del lago. Y esos fueron los nahuas, los antiguos de los xochimilcas. saludos

P.s.: Chinampas are called 'Floating Gardens' because they were originally floating when they started. They are floating platforms that are anchored to the bottom of lake Xochimilco (South-East Mexico City) by 'Huejote' trees. Huejotes are the species of aquatic trees that keep the floating platform stable and confined in between the man-made canals. Every year the farmers add another layer of sediment (mud) dug out from the bottom of the lake to the top of their floating gardens, a rich soil that enriches, even more, the black compost created by the previous crops. The weight created by the subsequent layers of wet soil (mud) makes the floating platform be less floating, and more anchored to the bottom of the lake, eventually becoming a man-made island. The space in between the skinny and tall Huejote trees and the many stacks in between allow the water to seep through creating a permanent natural irrigation system for the chinampa's crops. Thanks to this unique farming system Mexicans were able to raise 4, 5, and up to 7 crops annually, depending on the crop. What you just experienced is one of the most ingenious marvels of humanity of all time. Too bad only in Mexico it can be enjoyed. The World would be a lot healthier and richer without fertilizers and pesticides with the use of Chinampas. Lucky you. Cheers

Google Translate: P.s .: Las chinampas se llaman 'jardines flotantes' porque originalmente estaban flotando cuando comenzaron. Son plataformas flotantes que están ancladas al fondo del lago Xochimilco (sureste de la Ciudad de México) por árboles 'Huejote'. Los huejotes son las especies de árboles acuáticos que mantienen la plataforma flotante estable y confinada entre los canales artificiales. Cada año los agricultores añaden otra capa de sedimento (lodo) extraído del fondo del lago hasta la parte superior de sus jardines flotantes, un suelo rico que enriquece, aún más, el abono negro creado por los cultivos anteriores. El peso creado por las capas posteriores de suelo húmedo (lodo) hace que la plataforma flotante sea menos flotante y esté más anclada al fondo del lago, convirtiéndose finalmente en una isla artificial. El espacio entre los árboles huejote delgados y altos y las muchas pilas en el medio permiten que el agua se filtre creando un sistema de riego natural permanente para los cultivos de la chinampa. Gracias a este sistema agrícola único, los mexicanos pudieron cultivar 4, 5 y hasta 7 cosechas al año, según el cultivo. Lo que acaba de experimentar es una de las maravillas más ingeniosas de la humanidad de todos los tiempos. Lástima que solo en México se pueda disfrutar. El mundo sería mucho más saludable y rico sin fertilizantes y pesticidas con el uso de Chinampas. Eres afortunado. Salud
