The Educated Barfly

Күн бұрын

Sam Ross, the longtime Milk & Honey bartender originally created this drink for the opening menu at Chicago's Violet Hour, yet another bar which boasted ex Milk & Honey bartenders on the opening roster. Originally the drink contained Campari instead of Aperol. It was created at a time that Ross was listening to the MIA song of the same name. This drink is one of two drinks Ross created which became super famous in the cocktail world, the other being the Penicillin.

Browsing new contents just after waking-up and now I want to swap my morning coffee for a Paper Plane. You know you master your bartender art when you're able to make someone want a cocktail at anytime, even in the early morning.

My first attempt at a Paper Plane I had no amaro, so I subbed benedictine and it was great. It tones down the bitter and pushes up the sweet. My girlfriend won't drink it any other way.

I finally got the amaro nonino and aperol, using Evan William's bourbon. Had this drink for the first time just now and gotta say it's pretty awesome. First I taste bourbon and lemon, then the nonino blends Into the aperol with a light finish, very nice.

Beautiful cocktail, I have also made a variation where i substitute 50% of the burbon with rum (1919) and it enhanced it for me.

I recently tried making a 'Four Corners' from Sam Ross' Bartender's Choice app (the drink was created by one of the bartenders at Attaboy) that reminded me of his Paper Plane: Four Corners 3/4 oz Applejack 3/4 oz Aperol 3/4 oz Cointreau 3/4 oz Lemon Juice It was quite delicious! I used Laird's Applejack, which I found out later is only a mix of apple brandy and neutral spirit, and after further research I found that most use Laird's Bottled-in-Bond Apple Brandy. I suspect that would bring a stronger apple flavor, but the regular Applejack felt slightly closer to a bourbon, so reminded me of a Paper Plane. In any case, I highly recommend it to Paper Plane fans.

Just made this using Birddog 7 year old straight bourbon 88 proof. Very pleasant easy going cocktail 🍸 👌 You could taste each component without loosing anything in the mix. Love the equal part drinks. Particularly late into the session.

I gave this a like because this channel is awesome, but please, please adjust this recipe to AT LEAST 1-1.5oz of bourbon and just a squeeze of lemon juice and your welcome..this has become probably my favorite cocktail over the last 2 years and was my featured drink at my wedding in 2018. Once people discover this drink they usually friggin love it, enjoy, cheers everybody.

I had this one for the first time, and wasn's so convinced. I thought the Nonino doesn't really give this Cocktail the necessary amaro note so I tried it with Jägermeister (has a bit more character) and I must say, with Jägermeister, this is going to be one of my favorites. Thanks for this video.

Does the Corpse Reviver No. 2 predate the Last Word? I always thought that was the 1:1:1:1 template but maybe I was just subconsciously going for the one with a shorter name.

As far as I know the Last Word predates the Corpse Reviver #2 but we can only go by when these drinks were published. The Last Word appears in the early 1920's and the Corpse Reviver #2 was first published in 1930 (Savoy Cocktail Book) that's not to say that Harry Craddock wasn't making it before 1930 though so who knows. They're basically in the same era of cocktails. This may be a chicken and egg thing. Maybe we should tweet at David Wondrich to weigh in on this.

I know you probably already answered this so many times but still... your cocktails always fit in the glass so perfectly, i wonder what's the volume of that thing? I've got several types of cocktail galsses and I never get that awesome look, unless I do my cocktail like 1.5 or even twice as large as it should be...
@TheEducatedBarfly
@TheEducatedBarfly 5 жыл бұрын
Nikita GH this is a bit of an art and it took me a little effort to perfect but you need to consider how many ounces each drink Is plus dilution. For a 3oz drink I use a 5.5oz Libbey coupe or nick and Nora. The challenge is when using vintage glassware.

The Educated Barfly thanks a lot! I was afraid I underdiluted, but guess my 9-12oz martini glasses and coupes just aren't meant for classic cocktails.

Delicious drink! Even when not shaken as well as you do here. I had it in a restaurant tonight and they opted for a giant ice cube, which I was skeptical of at first, but it melted only a tiny bit during my enjoyment of the cocktail.

@TheEducatedBarfly
@TheEducatedBarfly 5 жыл бұрын
Patt Foad honestly my idea is that once you change an integral element in any cocktail it becomes a wholly different cocktail since the Nonino is a full 3/4 there are those who will disagree with me though for instance because Amer Picon is not sold here in the United States bartenders have recreated the Brooklyn with different Amari to equate the flavor of Picon and those cocktails are all still called a Brooklyn so I think this is a matter of opinion

I have a question that goes a little bit far from this cocktail in particular: how is the relationship between us bartender and aperol? I mean, here in Italy we don't have a so good relationship with him, but I see a lot of cocktail with aperol here, so I think that this is something that involves just us
@TheEducatedBarfly
@TheEducatedBarfly 5 жыл бұрын
In The US bartenders look at Aperol as a lighter sweeter substitute to Campari. It is used when we want a bitter Orange-ish flavor but Campari can be a bit strong. It does appear in a lot of drinks.

Does Aperol taste better than Campari? Campari is absolutely brutal. Idk if its an acquired taste but its literally ome of the worst things i have tasted. And thats coming from a guy thats drank his own piss. Twice. By accident. Dont ask

@largegoop

Aperol is a citrus-based amaro that is definitely sweeter and easier on an unaccustomed palate than Campari. Aperol is a lot more refreshing than Campari, which is part of why it works so well with prosecco in an Aperol Spritz
@CarlosSempereChen
@CarlosSempereChen 5 жыл бұрын
I can see how Campari can come off as tasting like cough syrup. It also tends to get used in cocktails that emphasize it. Aperol's softer; when I started playing around with Italian bitters, it felt like Campari for beginners. It's not just less strongly bitter, it also more fruitiness.
