you should try the "real" molokhia (tunisienne) with beef and complete different molokhia (powder instead frozen leaves).. thats the real arab molokhia. search for the recipe here on youtube and try it out.. no rice, or chicken ect. just molokhia with beef and bread.

She mentions adding tomatoes and ice to avoid making slimy molokhia. However, I have not noticed a problem with slime, when I add lemon juice. Tomatoes are slightly acidic, as is lemon juice and the acid avoids slimy molokhia. I have never added ice with dried or frozen molokhia.

You can find the ingredients in most Arab supermarkets in Patterson NJ, check the freezer second for the green jute leaves

An Egyptian store called Afadina sells Molochia (I didn't spell it correctly). I think it's in either East Brunswick or New Brunswick. It's a great store for genuine Middle Eastern food.

We cook molhkia in cyprus and we always claimed it was authentic to us.. we do use lamb meat and lambs tail fat also tomato pure. Our method may be authentic but not so sure about the molohkia leafs..
