I made this soup tonight following your instructions! Added some butter to the olive oil sautee, a dollop of Worcestershire sauce, and some celery seed. AMAZING.

The thing you said in the beginning about older cooking shows and how much more mellow they are reminded me of something. Before she passed, I'd watch cooking shows with my grandma after school. I heard "dirty, dirty vegetable" and immediately thought of that episode of Black Books. I too miss Pepin's show. Him and his apricot jam lol. A master. Watching him take apart a chicken always impressed me. A Gentleman. Glad I stumbled on this.

Here's a tip for cutting onions! When cutting onions, don't cut the bottom off. Cut the top off then place the onion on the cut surface then cut pole to pole. The bottoms will be on both sides of the onion and you can use that as a handhold so you avoid having a layer pop off and potentially slice your finger. Also try this with a little bit of butter melted into the olive oil. The smell of leeks, onions and garlic in butter and olive oil is honestly such a hunger inducing smell. Sprinkle some salt in when cooking the leeks/onion to season them and help soften them, draws out the water.

Loved the video! Something that helped my cooking is salting at every step or adding salt whenever you add an ingredient. Also I feel this would be great with some cream or maybe a rue at the beginning
