Pumpkin is more than just pancakes and pies. Pumpkin makes an amazing addition to soups and stews, and this Moroccan-spiced pumpkin stew is one of our absolute favorite winter recipes.
Each ingredient adds warmth, flavor, sweetness, and wonderful savory flavour.
Ingredients:
Chicken-600gms
Pumpkin-500gms
1 small onion diced
1 tomato sliced
Garlic-3 cloves(Grated)
Ginger-2 inch pieces(Grated)
Cayenne pepper-1tbsp
Coriander Powder-1tbsp
Turmeric powder-1/2tbsp
Cinnamon powder-1/2 tbsp
Honey-1 tbsp
Chicken stock-3 cups
Salt & Pepper
Olive Oil-3tbsp
Preparation Process:
1. Firstly quickly sauté the chicken with salt and pepper and keep the chicken to a side.
2. Add onion and spices and to the same after after removing the chicken. Sauté until caramelised and add Chicken Pumpkin and tomatoes along with Honey.
3. Add two cups of chicken stick and cook for 15 minutes on medium to low flame.
Serving:
Serve it with Rice or Couscous, enjoy the meal 😋
