“Diwal” (Pholas orientalis) is a unique and prized shellfish which can be found in the Philippines. We are in Valladolid, Negros Occidental and we are catching some of these “Angel Wing Clams” the traditional way. Erwan Heussaff is hopping on a boat with the team, and we are sailing into the murky, yet bountiful waters that are home to these rare, elongated clams. How many pieces do you think we will find?
Stay until the end to watch Erwan cook some Diwal with the famous Kinilaw Master of Sagay himself, Vicente “Enteng” Lobaton.

"Enteng is a seafood master.Erwan is absolutely nothing at all". What a very humble man Sir Erwan is. I really have the highest regard on this man. A man born with a golden spoon but has the most golden and beautiful heart as well. Amazing person. 😊

It's seasonal and can be found only in Negros Occidental particulary Valladolid and Capiz in Panay Island that's why it's expensive.

There are probably hundreds of very unique fishing techniques in the Philippines that have rarely been documented and likely do not exist in other countries. The pole method here is fascinating. Another one I remember from my readings is using like a small float attached to fishing lines on a long string drawn by running across the shore, almost like a kite. IIRC, they were used to catch predatory near-shore fish like trevallies (talakitok).

Ilonggo here, I remember the first time I put one of these in my mouth. It was magical, you immediately realize how different this is from your run of the mill talaba or green shells.

I find it interesting nga wala vernacular ang tahong sa hiligaynon, kag ngaa green shells ang tawag kag indi mussels. 😊

@@arminsarcia I mean hindi man tanan nga mussels green. Iban daw cream-ish, iban itom. Tapos may ara gid ya sang iya nga sabor ang green nga version sng mussels.

Diwal is best slightly grilled or steamed. That’s it! No fancy stuff like butter, garlic, herbs. Before cooking you allow the diwal to rest for a day or so to make them spit out the mud.

I recall, in 2009, first time i went home to iloilo last time i visited my province 1996, we had a first taste of diwal...not sure if its the same with they used to call angel shell....back then, it was smaller but it was white colored shells tasted really good. It was found only in roxas city. Seasonal kind of shellfish. I came back in iloilo 2022, wow, it was really big and it was being cultured now in iloilo. No longer seasonal...all year round .....size was overwhelming....tasted good esp baked with cheese....

Its Valyadolid... Not Vayadoyid ... That's our neighboring town... Where majority of seafoods we consume is from that place. Before regulating almost everyday my mother cook Diwal... Now because of regulating the harvest it's very expensive... But its good since this will give Diwal time to reproduce.

When I was young local vendors would deliver diwal to my dad thrice or four times a week now they rarely bring diwal, if they do it's only a handful nalang 😢
