This brought back a memory. I grew up in the suburbs but my mom's whole family was in the city. They came to our home every Fourth of July and my uncle would bring a small pig. I don't remember eating it but I know the adults enjoyed it.

I met my wife at a hog roast we had all we needed on a small island in the lagoon we had a hole hog on a big smoker the party lasted 4 days 😊 . Enjoying life much better than fretting about all the things we have no control over my yal be continued to be blessed

That was surprisingly fascinating. Took me 15 minutes to make a cup of tea because I was watching and didn't want to miss anything. Pulling out that big ol' shoulder blade, that was awesome... Does the chef normally work hours like that? Or did he make an exception?

Damn I miss this stuff. Salt and vinegar, sometimes a little "pizza pepper" mixed in. Chopped with the fat and crispy bits. I grew up with it. Elsewhere everything is smothered in sweet red sauces and rubs. Good, but no cigar in my book. That, and oceans of cole slaw and cornbread, yes, your boiled "new" potatoes (but not potato-salad, that's an evil Western NC invention!). Good eatin'. Back in my day, everything was organic because people didn't use any of the chemicals now usual in commercial agriculture. Looks like a good time was had by all.

quick tip! use a chunk of rebar through the wire cage on each side, makes it way easier to handle and it doesnt sag when liftting
