Learn how to make the spiciest chicken bowl ever with this step-by-step easy to make recipe video! This spicy chicken bowl recipe is sure to satisfy your cravings for bold flavors and a fiery kick.
Spicy Chicken and Rice Bowl
Olive oil- 2 Tbsp
Onions(sliced) - 3-4
Garlic cloves(sliced)- 4-5
Chilli flakes - 2 Tsp
Red and yellow Peppers(diced big) - 1 each
Chicken on the bone - 1 kg (can use soya nuggets if veg)
Short grain Rice - 300 gms
White wine- 1 cup
Chicken stock /water - 4-5 cups
Salt and pepper to taste
Paprika and cayenne powder - 1 Tsp each
Lime juice- of 1 lime
Tomato- 1 - 2
Freshly chopped Parsley leaves - a small bunch
Jalapeño- as much as the spice level you would like
Method
Marinate chicken with salt, cayenne, paprika and lime juice. Add oil to a pan and sauté the sliced onions till golden. Then add sliced garlic, followed by bell peppers and finally the marinated chicken on high heat! Sear the chicken till golden brown. Then add the rice and sear that too for a minute or so. Splash in the wine and deglaze the pan. Once the wine has evaporated, add the stock, bring to a boil, then simmer for about 15 -20 mins occasionally stirring. Then add tomatoes and jalapeños and give it a nice stir. Finish with parsley and serve hot.
Herby potatoes
Parboil 5-6 potatoes and slice them round with skin on. Add some butter and oil to a pan and cook them on high heat for the first 10- 15 minutes to get a nice colour on them. Throw in some crushed garlic cloves, sliced onions, fresh rosemary & thyme stalks, salt and pepper. Allow them all to get cooked well and serve hot as a side to the rice dish.
