We make the most epic vegan caramel and then turn it into a cake. This is an absolute must try! There is vegan caramel in the cake batter, in between the layers and in the vegan caramel buttercream.

My dreams just came true in my prayers have been answered!. I used to like those cuban guava paste and cheese pastries with the flaky pastry dough IDK if it's puff pastry or what but I wish there was a vegan version . Those with Cuban espresso are life giving

Thank youuuuuu for showing how caramel can be made with coconut milk and butter!! I've made the non-vegan version but as soon as I saw this recipe ... it just made perfect sense! Caramel is in the fridge and I'm planning on making an ermine / flour frosting using a blend of refined coconut oil and vegan butter (nuttelex) rather than a straight up buttercream as shown here, for better stability. Am still deciding if I make the cake layers or throw everything down as a sheet cake and topped with pecans or something, but I am soooo keen for this cake.

Update: I made it as a sheet cake. It was amazing - tender, Caramelly, lightly coconutty goodness. Do yourself and cake loving friends a favour and make it. Don't expect leftovers.
