Knifeguy/Dr , first off it's refreshing to have someone as clear as u about stones how they work why they work etc.. Many people talk in such detail novices like myself who simply want sharp edges lose track ... I use naniwa chosera stones which I very much like and a black Arkansas on occasion but I need a 6-700 grit stone badly but don't need the quality of the chosera if u have any advice let me know ... Also if u know somebody with a Katiyama 8000 give it a whirl I found it delightful and may give buy one very cheap but nice

I just recently purchased the naniwa aotoshi 2k....very nice stone.... it is true feels like a 2K but shines like a 4K.

If you soak the snow white, its very likely to crack while drying.

Also I have a vg10 outdoor knife and find the vg10 and chosera don't exactly love eachother I wonder if there is a reason the vg10 in my opinion is an ok steel people swear by it but I am moderately pleased

MrKnifeFanatic Can you recommend a lapping plate for the Green Brick and Snow White stones. I have the 140 grit lapping plate but i feel it scratches the finer of the 2. Thanks

This Green brick looks very nice - will it improve the sharpness of my 52100, AEB-L, VG10 and 12c27 kitchen knives after 1200 DMT and before stropping with 0.5micron diamond compound? /unfortunately no budget for 4k+ stone right now/
@MrKnifeFanatic10 жыл бұрын
So, are you currently going from 1200 DMT straight to .5 micron? I would recommend another stone in between, Green Brick would work just fine. If you have more sharpening questions visit me at chefknivestogoforum. BTW, I don't receive a penny for selling these sharpening kits, I put these together for you guys. Thanks for watching!

They seem like nice stones, but ideally you'd want something between the 2k and the 8k, no? Maybe a 5k? What difference would or wouldn't it make doing a few swipes on a stone with a median grit between your 2k and 8k?
@DefMunkyYT9 жыл бұрын
That particular 2k stone will leave closer to a 3-4k finish due to the breakdown of the abrasive in the slurry it forms and is the entire reason this 3 stone setup works so well. So the 2k is directly on the stone and the slurry polishes and refines the edge as you go and it breaks down further. I think that is actually something the Naniwa Super Stones will do as well. They tend to finish at a higher level of polish than they are rated due to the same breakdown of the abrasives in the slurry. Now if you use something harder like a Shapton then you will probably want a 4-5k between the 1-2k and 8k.

Great vid but the CKTG link says this set is out of stock and still lists the latte stone.
@MrKnifeFanatic10 жыл бұрын
Yes sir, we are fixing that shortly. It will be out of stock for another week or so likely, I'm not sure when Mark's next Naniwa order comes in. The Green Brick and Snow White are out of stock very often. :) Thanks for watching!

Is the new Imanishi 400 still available? Is it still called Latte?

I wish i could sharpen free hand. Every time i try i get an uneven edge. Edge pro for me i guess.

+davmowl I think they do international overseas orders... I'm from Canada and they definitely did ship to me
@MrKnifeFanatic8 жыл бұрын
+davmowl I believe that CKTG has cut down on international orders recently. Please email them at info@chefknivestogo dot com and see if they can help. This is a good combo, but there are others that will get you similar results if you can't find these particular ones. Let me know how it goes and I'll try to help you as best I can. Thanks!

I don't see a kit on your site with these stones...
@MrKnifeFanatic9 жыл бұрын
Thanks for pointing that out, just noticed this as well. It seems the 400 grit and snow white are always out of stock, and the green brick too. I guess I made it too popular? LOL.... damn, well you can still purchase all the stones separately, and also the original "Latte 400" is back in stock, which we didn't think it would be available again. Pairing the Latte with a Shapton 2k and Snow white would be a killer combo as well. Thanks again!

+MrKnifeFanatic What do you think about Shapton pro 320 as the first stone followed by the green brick/snow white?
@MrKnifeFanatic9 жыл бұрын
Haven't tried that exact combo yet, but I imagine it would work okay. Ideally you'd want a jumper stone, like a 500, 800, or 1k. The Imanishi 400 stones cut almost as fast as a Shapton 320, but leave you with 500-800 refinement if you feather the strokes a little. The 320 is best paired with a 1k in my opinion. Check out Chefknivestogoforum and put this in the sharpening questions, I'm sure you'll get a lot of different answers! Thanks!
