Mui Fan is a quick one dish white steamed rice topped with a quick braised sauce. The sauce should be light as to emphasize the sweetness and freshness of the seafood, meat or vegetables used. It’s a perfect way to use leftover rice with bits and pieces in the fridge.
The golden fried rice method is an extra step but it give a sense of decadence to the dish. And, pickled green chillies in a soya sauce bath is a must condiment to serve with this dish.
**Note : This dish can be either plain steamed white rice or fried golden egg rice. We are cooking the golden fried rice method. Cook whatever rocks your palate.

For an even more silky finish the egg can be added after the gas is turned off so as to allow the heat in the pan to cook the egg while not over cooking it and serve immediately

Syafie Saat You can try without the wine, the taste won't differ too much IMO. Happy cooking!

Syafie Saat Maybe you can dilute a little rice vinegar into water and add that in place of the hua tiao wine. I can imagine they have the similar flavor profile since they're both a product of rice fermentation or you can just omit it entirely.

yup you can leave the wine out, as there isn't a proper non acholic replacement for it

Yvonne It's a one meal dish, healthy and utterly delicious. Asians always cook from scratch and this is easy peasy for them.
