The white "pudding" like part is hemolymph. Crabs as well as lobsters do not have blood like humans do, but rather hemolymph which changes from a liquid into a solid when cooked.

Zheng Fang I think they’re talking about Westerners, lots of them dip their food in an artificial, very unhealthy cheese sauce and they use so much cheese sauce, you can’t even taste the actual crab anymore. Crab doesn’t come cheap and when you’re combining it with the cheapest cheese, the flavours clash.
