Who better to be the first chef in Munchies from our nation's capital than a guy with a Slayer sticker on his sausage grinder? Kyle Bailey is the chef at Birch & Barley, one of DC's best restaurants. He works alongside his wife, Tiffany MacIsaac, who's also the genius behind the restaurant's innovative desserts and pastries. Birch & Barley is also known for having one of the country's most comprehensive beer lists, which is overseen by Greg Engert. Kyle brought Tiffany and Greg out on the town to show us two of his favorite spots. First was Radius Pizza, where chef Todd Wiss cooked up a lot more than pizza, and then it was on to the cocktail bar Room 11 to make sure Kyle was properly snackered before he had to cook for us again. I love most of these restaurant pieces, not for the food (which I adore), but for the bonding that these folks have for each other, even though they could consider themselves competitors. With small businesses it's not about personal success above all else, it's about helping each other succeed and giving props to those that deserve it. Great filming and editing on these pieces!

hahahahaha, I'm American, but I do prefer the current Euro/Continental style of fork wielding. I guess the American style forksmanship was how it used to be done, and we didn't get the memo when you guys switched it up!

Im sorry but when I go out I order a starter, main and desert. But the main is still the same size as a normal dinner. They don't make it smaller so you can have a starter and desert.

I don't remember ever saying that they were hipsters. I actually think that they're extremely down to Earth. Also, how do you know I'm not cultured? Because I think that certain restaurants are dark, that means I'm not cultured and lead a less fulfilling life than them? Thanks for the info :-)

I love trying new beers. I think alcohol and spirits is such a individualist preference. Like saying a $10 wine is inferior to a $20 bottle because of price. My preference is wheat, Abbey, and Trappist ales. Who is to say what one is better than the other.

I don't eat McDonalds. Nothing wrong with ordering a beer with food. But it is pretentious when the chef tells me what beer to order with what food. I know what I like.
