In a country where-as Gastón Acurio said-ceviche is way more than a recipe, "it's a way of life", it's pretty much a given that Peruvians take the dish pretty seriously. Javier Wong is arguably the top ceviche-maker in the country-some even call him the godfather of ceviche. He's not only well-respected in the chef community, but also amongst serious ceviche eaters.
His "secret" (although he claims there's no secret) is in the simplicity of the dish. It's almost like a minimalistic ritual; you need the freshest possible fish (he only works with sole), Peruvian limes, onions, salt and pepper. And a lot of love to mix it with.
He only works out of his own small house in the working class neighborhood of La Victoria (hence the eatery's name, Chez Wong), he doesn't have a menu, and you have to call days in advance in order to get a spot. But if you want the real deal, he's your guy. And now he's going to show you how to do it yourself.

This guy is a legend and I dont think people realize that Peruvians joke around like this. Its not rudeness, its like sass, its sort of like joking with someone to make them feel like they're part of the group. People usually only joke around like this with close friends. Even the snobbish and rich use slang like this. Its a laid back personality type social norm.

Thabks for bringing this up. As a spanish speaker i was a bit on edge with Wong. Like "why the fuck did you agree to doing an interview if you were gonna treat the host that way?" That being said, my friends & i have a similar practice, but it's not as aggressive.

Firstly, his ceviche is world renowned so he has more-than-earned his sass. Secondly, anyone who doesn't "get" his humor, probably doesn't "get" a LOT of things. So be it. (By the way, the subtitles can't fully capture the sharpness lost in translation from his actual words, which are sassier still.) Third, the producers obviously enjoyed his responses. That's obviously why they left them in the final cut. Frankly, I thought this episode was perfect in every way. Thank you, Munchies! Great job.

This isn’t the real ceviche recipe. There’s a sauce that goes all over the ceviche that isn’t shown in the video. Look at ceviche dishes pics or videos served at restaurants and you’ll see there’s actual liquid at the bottom of the plate in all of them, that’s the real secret, this video is just a crappy attempt from Vice to show “authentic” recipes when all we’re shown is an incomplete video. This is trash. Look up how to make that liquid sauce and THAT is where the world renown flavor of Peruvian ceviche comes from

@@juniperbarry9105 I am peruvian and the juice is called "Leche de Tigre", which is basically lime juice, salt and leftovers from fish, nothing else. If you see another color, like red or yellow, thats a variant called "Tiradito" or simply its a different ceviche not from Peru.

Soy de Perú y me encanta el ceviche. He probado muchos tipos de ceviches en cada una de las ciudades a las que he visitado del Perú, cada sitio tiene una receta especial y diferente de la otra pero ninguno se compara al ceviche costero, el de Chincha. Es la perfección hecha alimento. Realmente ésta comida es una de las razones principales por las que muchos extranjeros deberían visitar el Perú y por las que me encanta visitar diferentes zonas de este bello país. A cada lugar a donde voy, siempre tengo que probar el tipo de ceviche de esa zona. Ésta es una de las cosas más maravillosas creadas por los antiguos esclavos del virreinato, mi admiración eterna a esta gente por crear algo que ha sido increíblemente bien recibido en todo el mundo durante siglos.

Munchies I have a question for you: Who translate the video ? .Obviously 100 % it was not done by a Peruvian. Just an example, in Peru "pendejo" is more like calling somebody smartass. I know for fact that in Mexico, "pendejo" means idiot. See, totally different.Also for: How could you make a ceviche in the USA? the right translation to the answer would be: With fish, with what else you can make it. Even between Spanish speaking countries, the slangs are different in each one. A proper translator is really important.

I had ceviche in Lima many years ago, haven’t had it matched in the many years afterwards. It was a simple ceviche with fish, stone crab of some type and seaweed. Excellent taste and texture.

i love this guy! he fought the "gringo" (Chef Javier's words, not mine) to the end in not giving away his recipe secrets. good for you lol. i agree that the best ceviche is in it's simplicity. my favorites are peruvian and ecuadorian ceviche. love love love octopus/fish/shrimp ceviche! the simple version chef Javier Wong makes in this video looks out of this world! nam nam nam

I'm a professional Peruvian Cuisine Chef and if you wanna try the best ceviche recipe follow this steps: cut into small pieces Tilapia Fish, add some red onions, coreander, salt, ajinomoto, 4 green lemons and 2 tea spoon of tabasco to give an extra spicyness. Enjoy your Ceviche :)

To eat in Chez Wong restaurant is very expensive. He is good but you dont need to pay too much in Lima to get good quality Ceviches. There are plenty of good Ceviche restaurants in Lima where you dont need to pay so much
