Awesome Ceviche. Javier Wong was the reason that I came to Peru. His restaurant is in a working class neighborhood, has no sign at the door and you would need to make a reservation ahead of time. The walls are covered with clippings not only from newspapers and magazines from Peru but from all over the world. There is not even a menu. Javier cooks two types of ceviches and two hot dishes using FRESH flounder and octopus. How fresh??? Well, Javier explained that the ceviche that we were about to eat was made with a flounder that the night before was sleeping in the bottom of the sea and was caught early that morning after a battle with a fisherman that he ultimately lost. This is like no other place in the world because you can get fresher than fresh.

Adolfo Briceno the only thing that turns me down about Javier Wong’s ceviche is that he adds msg as he describes in one of his videos as aginomoto that’s the name in Peru for gmo wich is a shame for such a dish.

@@louisdlariviere3824 Thanks for you comments. GMO means genetically modified organism. An organism that has had its DNA altered or modified in some way through genetic engineering. In most cases, GMOs have been altered with DNA from another organism, be it a bacterium, plant, virus or animal; these organisms are sometimes referred to as "transgenic" organisms. You might be referring to MSG, also known as Ajinomoto or Umami, which has bad reputation in the U.S. because of pseudoscientific studies that claimed it causes Chinese Restaurant Syndrome. Some other American food products that contain MSG are KFC chicken, Doritos, Chick-Fil-A Chicken, Pringles, Campbell’s chicken noodle soup, just to name a few. The strange thing is that nobody complains about these products having MSG. It is believed that Chinese Restaurant Syndrome has to do more with racism than something else. @@louisdlariviere3824 It will be called a condiment, instead of a complement. Chef Wong prepares the his ceviches as simple as possible. He thinks good ceviches are made with no more than 5 or 6 ingredients but as far as I remember MSG was not one of them.

Bourdain and Ripert is the best duo I swear. Tony's street-smart rugged toughness and Eric's rather quite manner of refinement get connected almost comically through their shared enthusiam for food. I love them both

I can only say. Get to a place to get fresh fish and start cooking. You'll see that the more you practice, the better the result. Cebiche is quite a simple dish, but the balance on ingredients makes the difference. Just try and you may make a cebiche that suits you best than any other. :)

The only lesson here was me realizing how much I miss those two together. I don't like cooking shows, and generally don't enjoy travel shows. But Tony Bourdain (and especially with Eric Ripert) made an "eating show" that made me want to be there. Is it selfish of me to be mad at him for dying?

Ich liebe peruanisches Essen. Cebiche ist eine peruanische Spezialität Punkt. Andere lateinamerikanische Länder haben ähnliche Gerichte, die auch so heißen, also nur Homonymie... der richtige Cebiche den die Welt kennt kommst aus Peru.

Richtig. In Lateinamerika erkennt fast jeder die peruanische Küche als die Beste des Kontinentes (zusammen mit Mexico), die zwei grössten Küchen Amerikas sind Peru und Mexico, keine Diskussion. Wenn du KZfaq-Videos unter "Top 10 mejores gastronomías del mundo" anschaust, die peruanische Küche ist immer dort (auch wenn das Video von einem Mexikaner gemacht wurde). Bei solchen Videos, die aber auf Englisch sind, erscheint die peruanische Küche nur selten. Erst in der letzten 10 Jahren hat man angefangen, peruanischen Restaurants in Europa zu bauen. Erst in 10 Jahren oder später, wird die peruanische Küche weltweit die Anerkennung haben, die sie verdient.
