In this opening episode, we are introduced to Derek, who shares his knowledge about raising native blackface sheep in the picturesque hills of Islay. These sheep are given ample time to mature and are raised in a natural, unrestricted environment. As a result, the mutton they produce is slightly larger and possesses a more exquisite and tender taste. Later, we venture into the breathtaking dusk scenery, where we prepare a delightful flatbread with mutton and tomatoes, using the Gozney dome for cooking.
