Some call it the best summer dessert, others the Christmas dessert, and everyone agrees Pavlova is the perfect treat because it's light, juicy, and delicious. 🤤

Ingredients
☀️ Meringue:
▪️180g egg whites
▪️160g sugar
▪️120g powdered sugar
▪️Lemon citric acid (pinch)
☀️ Frosting:
▪️Mascarpone cheese 150g
▪️Cream cheese 200g
▪️Heavy cream 240g
▪️Icing 60g
Preheat the oven to 170°C/330°F (fan).
👉 Cover the tin with baking paper.
👉 Beat egg whites at medium speed (I use KitchenAid 4 speed).
👉 Add lemon juice or citric acid.
👉 Gradually add sugar.
👉 Continue beating until the mixture is stiff, glossy, and all sugar is dissolved. It takes approximately ten minutes.
Pay attention to the video; I show how meringue should be. The key to this dessert is the meringue.
The meringue should not be flaky. The texture should be glossy and elastic. The meringue should have a stable form. The form should resemble a bird’s beak
👉 On low speed or with a hand whisk, add icing. Be gentle with the meringue; mix from the bottom up!
👉 Gently spread the meringue evenly into the prepared baking tray, and sprinkle with almond flakes
👉 Bake for 12-15 minutes.
👉 In a bowl, add mascarpone cream cheese, heavy cream, and icing. Whisk everything together until stiff peaks form. Normally, it takes 2-3 minutes.
👉 Remove meringue from the baking tray, cover with a towel, move upside down, and remove baking paper.
👉 Spread with cream and top with berries.
👉 Roll up and place on a serving plate.
👉 Top with a little frosting and decorate with berries
👉 Refrigerate for at least one hour, but not more than 24 hours
