My Favourite Norwegian Stew: Lapskaus

Lapskaus Recipe:
30g butter
30g evoo
1,5L beef stock
300ml red wine
30g flour
250g swede, diced
250g, yukon gold, diced
200g celery root, diced
150g carrot, diced
500g bavette steak, cubed
2x bay leaves
parsley, chopped
s+p
-reduce beef stock by half to 750ml
-sear steak cubes in butter/olive oil, remove the steak
-add swede, celery root, and carrots; sweat for 5mins
-add flour, cook for 3min
-deglaze with wine and allow to cook for 5min
-add back the meat, potatoes stock, bay leaves
-bring to the boil and reduce to a simmer
-skim the impurities that may rise to the top
-simmer 2.5hrs, season well with salt and pepper
-garnish with chopped parsley

Looks nice! Please also try German Labskaus - which is way different to the Norwegian version. You make it with seared and seasoned corned beef, mixed and mashed together with cooked potatoes, beetroot, finely chopped onions, pickles and a bit of pickles juice. You eat it with fried eggs and if you want some matjes.

Thank you! And yes, to me Labskaus is one of the most satisfying and exciting dishes, and so few know about it! It was actually one of the first dishes that got me into cooking over 10 years ago. My culinary colleagues were, to say the least, surprised by to see a pink potato puree. Excellent reference, thanks for adding.

hey man, small suggestion; have you thought about sharpening the knife? It seems you use al lot brute force to cut those vegetables. It makes all the difference even tho it doesn't seems worthy

Try using salted fatty pork and salted lamb. One good way is slicing a leg of lamb and salt it in the fridge for a few days.

Looks like lapskaus to me, and not the Trondhjems one either. Edit: just to be fair it _is_ a type of stew, though the generic word for stew that we use is ‘gryterett’.
