Skim the top of the beef gravy to remove the excess oil
Ingredients:
For the enchiladas
Whit corn tortillas
Oil for frying
Medium cheddar cheese
For the beef chili gravy sauce
1/2 onion;small diced
2 minced garlic cloves
1 lb ground beef (80/20)
2 tsp ground cumin
2 tsp oregano
2 tsp black pepper
Salt to taste I used 1 1/2 tsp
3 1/2 unsalted beef broth
2 tbsp tomato paste
3 tbsp New Mexico chili powder
1 1/2 tsp paprika
1 1/2 tsp cayanne pepper
4 tbsp APF (all purpose flour)

Normally I would stuff the enchilada meat mixture inside the tortillas, but this is an interesting take where the meat sauce is under the tortillas and poured on top, the inside is only gooey cheese and onion. Interesting idea!

Putting it on the bottom keeps them from sticking. I use wolf brand chili too sometimes if I'm in a hurry and don't have time to make the chili con carne.

Made these last night. Easy and really good. My wife worked late so I had everything prepped and waiting in the baking dish in advance. When she appeared she asked 'What's that?'. Preheated the oven and 10 minutes later we ate these. This morning she commented that this was backwards. The cheese was on the inside of the tortilla and the meat was on the outside. Just a nice change. I like this recipe because it is a little different. Really easy and delicious. I used a pound of medium cheddar that I grated with a box grater. Next time I might try and different cheese in the tortilla and a contrasting cheese outside.

Delicious, I just made this, with a few tweaks and it was soooo good! 👩🏻‍🍳 chef’s kiss! The only alterations I made were to add Jack cheese and some of the roast, I just made, inside the enchiladas. Yummy yummy!

Very straight-forward enchilada recipe, tastes great too. I used my normal seasonings for browning the tex-mex ground beef, but I'm sure Claudia's seasonings are just as good. I also used a table spoon or two of corn starch (rather than flour) to thicken the enchilada gravy. First try turned out great.

I just received my copy of Cooking con Claudia! When I started flipping through it, it fell open to the sopa fideo con carne recipe. It's as if the book knew exactly what I needed to make for dinner after Mass tonight. I had a co-worker many years ago who used to bring us leftovers of fideo to work and share. I have so many happy memories eating this. Can't wait to have it simmering on my stove this evening. Beautiful cookbook - great job! Oh, and I love how I hear your voice in the written directions.

I've been making Ground Beef Tacos for 40+ yrs... rather than pouring out the grease ( that's a storage problem plus there lot's of leftover grease remaining) or KEEPING the grease by mixing in Flour (not really good for you). If you just turn up the heat in the Pan and stir every minute or so, the Grease will evaporate and your ground beef will also get a nice char on it for more flavor. I've been taking care of my Mom for 20+ years and we eat Tacos once a week AND I even Deep Fry the Tortillas for a few seconds just until firm and she eats 3, loaded with the Meat, Cheese, Sour Cream, Avocado, Lettuce, sliced Cherry Tomatoes, sliced Olives and a Hot Sauce...she gets checked out every month, because she's had Cancer years ago, and her Doctor is STUNNED because her Cholesterol is lower than the average 35 yr old... Mom's 82

I grew up on Tex Mex enchiladas and for a long time, that was all I knew. I’ve tried Mexican enchiladas throughout my life and while they’re amazing, I prefer Tex Mex 👌🏼 great job, those looked good!

I'm really glad you posted this. I've never perfected beef enchiladas, and I think this is going to be the ticket. My chicken enchilada casserole is super good (my recipe) and we devour it every time I make it, which is probably twice a month.

I've had enchildas made in restaurants and homemade by Mexican people in California. They're very good, but the best ones I've ever had were made by an Italian woman from Italy. They're not just good; they're delicious beyond belief.😻 After she served her enchiladas to guests, she would always get requests for the recipe and would be asked insistently about how she made them.

I just made this for dinner tonight and it was a HUGE hit. It was the first time I made the recipe, so I followed it completely and it turned out great. And the tip about frying the tortillas before rolling the enchiladas was awesome. I never use corn tortillas because they always break apart. These were perfect.
