That crunch is everything. My Phillipino friend turned me on to scallion pancakes and I am hooked for life. They were store bought but I need to learn how to make them.

This is my mom's recipe too :) I think it might be because the dough dried out when you were waiting. Try covering it with plastic wrap. Also some brands of flour need more water, so you can adjust accordingly. (Aim for a soft dough). And thank you for your kind comment :p

Hi Fenny I am from Singapore. Just to share with you that there is no dish called “Singapore Fried Rice”. The correct name is “nasi goreng” which means fried rice . The name is used in Singapore, Malaysia and Indonesia to differentiate from Chinese fried rice. The shrimp paste used is “belachan” a very pungent ingredient when fried but it gives a distinct aroma. It is entirely different from the shrimp paste in Hongkong, China. Belacan is very versatile and with chilli is commonly used in various dishes like fried water spinach, sweet potato leaves, beans etc and also as a dip with lime juice or marinade for meats. One needs to get used to the taste ....just like smelly tofu! You are doing well so keep it up!

Can I replace the all purpose flour with almond flour or even coconut four?

Hey unfortunately they won't have the gluten this needs. But you could try substituting part of the flour? Or whole wheat would work too. But the taste won't be as good :p
