I offer you a cake recipe that you can prepare for Valentine's Day or for any occasion. It is a dessert composed of a sponge cake made with almonds and cocoa and without flour, a pana cota style cream and a jelly made with raspberry syrup.
Step 1: Ingredients
-90g ground almonds
-30g cocoa
-70ml milk
-3 egg whites
-60g sugar
- mold D=15 cm
1. Mix the almond powder with the cocoa
Add the milk and mix with a whisk. You will get a sticky dough.
2. Whip the egg whites until stiff. Add the powdered sugar and continue beating.
3. Fold 1/4 of the egg whites into the almond mixture. Mix with a spoon or a whisk to thin the batter.
4. Then add the rest of the whites little by little, with a rubber spatula, gently lifting the dough from bottom to top so as not to break the whites.
Place in preheated oven at 170°C for 20 minutes
Step 2: Ingredients
-30g flour
-2g agar agar
-600ml milk
-250g sweetened condensed milk
Mix all ingredients.
Place everything over medium heat and cook for 2 to 3 minutes.
let cool, then place the cake in the refrigerator for 4 hours
Step 3: Ingredients
-0.8g agar agar
-200ml raspberry syrup
