Very pleasant video. I really enjoy your calm demeanour and simple instructions. I’ve been making sourdough for 10 years and learned from Tartine. Then, like you, I adapted to suit myself. I never have discard because I now use a dry starter and keep it in the fridge. I learned this from Elliott homestead. There seem to be as many methods as there are bakers. I’ve broken all the “rules” and still ended up with great bread 😂
