I cook with these preserved lemons all the time, they add sooo much flavor to any dish! I make a larger jar so I don’t need to make as often. ❤

I cut the lemons in wedges and add enough salt to make a saturated brine (there is undissolved salt in the jar) and they last for years. And they actually get better the longer you store them. I always let them stand for at least 6 months before I start using them.

Adding the honey when you make this is what will extract the water soluble parts of these medicines. Vinegar doesn't do a great job at the water soluble stuff.

I want to love my new Le Creuset, but the first thing I tried cooking in it is pinto beans, it's been an hour and a half and they are still tough as rocks. I did soak them overnight. Any suggestions? My Bialetti diamond non -stick cooked them in 30-40 minutes tops, the reason I went with Le Creuset is for it's non toxicity and durability.

Hi! I think that the vinegar will have taken most of the flavor out of all of the ingredients, so they'll just be mushy/vinegary tasting at the end. Not sure if they'd taste good in soup.
