I had a culturally diverse friend group as a kid, so my mom picked up all sorts of recipes from their mom's that became staples for us. This is one of them! My mom made this all the time to serve on the side, only she would cut the cucumber slices extremely paper thin. I absolutely love it.

That sounds sorta like the Japanese style. Paper thin cucumber slices in a sweeter and less hot pickle brine. I grew up on it. Look up “cucumber namasu “.

Glad so many ppl from every background are making it and sharing. Makes me proud to be Korean. One tip is to rinse the cucumber after sitting in salt & squeezing as much water out so if you keep it for more than a day it doesn’t get too watery. And using monkfruit sugar substitute or stevia works really well if avoiding sugar. Or use Korean plum extract spelled 매실.

@@bellagab3 I thought it was fine! But if your worried do half that at first, mix it up, 30 minutes later give it a try, and if you want to add the other half, and if not then good to go! It’s literally just personal taste on it. I don’t like sesame oil overpowering things. But also I used it with rice and grilled pork so it worked well at the 1/8

Yey, Korean food!! There are various ways to make kimchee. "Kochoogaru= korean hot pepper 🌶 powder" & Instead of rice vinegar, white vinegar can be substituted but try to lower the amout about to 4 Tbsp and gradually add more if you want. (I think Rice vinegar is fermented so the flavor is more gentle.) I lower sesame oil to 2 -3 Tbsp. Just try to eat up fast. Longer in the fridge makes more juices to make them saggy. They are not fermented like napa kimchee from what i know! Eat with rice is the best tho!

I’ve made this so many times in the past year. The video was sent to me by a co-worker after I ate her cucumber salad and begged for the recipe. Most of my Asian friends and family don’t like the harsh bite of onion so I use less. I add julienned carrots for crunch and sweetness. For those worried about saltiness, start with less salt, then taste the cucumbers to for flavor. Add more salt as needed. Only rinse if cucumbers are too salty. Otherwise it’s unnecessary. Rinsing can also make cucumbers a little mushier. Make extra to store in fridge for lunch, dinner and for snacking. This recipe is a WINNER 😋😋

You're adding salt to get the water out, so rinsing would defeat the purpose. Maybe just wipe it off with a paper towel.

I’ve prepared this before. But, on my recipe, I rinsed the salt off the cucumbers after I left them in the salt for about two hours. Everything else is basically the same. It’s really good. I like regular cabbage kimchi, radish kimchi and cucumber kimchi.

411 for ingredient/subbing questions: Gochugaru is a Korean spice; think of it as like paprika but spicier. It comes in a bag as opposed to a jar and is often used for making broth/soup. If you cant find this powdered spice, mix some gochujang (spicy korean paste found in most mainstream grocery stores) with a bit of water to create the consistency of your liking. Onions: it doesnt matter if they are white, yellow or red. Use the onions you like best. Adding green onions is a must IMO Subbing rice wine vinegar: I wouldn't, as it has its own distinct flavor. You can grab a cheap @ss bottle at Walmart or TJs. Subbing sesame oil: Never, my love. Sesame oil is the cornerstone of many Korean recipes and cannot be subbed with things like olive, canola, or vegetable oil. Its not illegal but the taste will be completely off. Ive subscribed and shoulve long ago. The dedication of this woman has😊 inspired me too many times. PS: For yall, one of the best cheap, easy, and delicious meals out there is grilled/baked/airfryed chicken prepared whatever way you want, along with steamed rice and this cucumber kimchee. Its so bomb, and easy too. Your tupperware may be stained AF tho 😂😂
