Add a little baking soda to the flour mixture as well, it'll gelp withvthe crispy texture. Adding baking soda makes incredibly crispy chicken if you use buttermilk or an acid in marinating your chicken.

The flour absorbs it and swells creating all the little chunks. Then the chicken gets chunks of flour stuck to it rather than just tiny granules.

Yup, that’s why when you’re breading chicken the last few pieces always look better than the first few because of the extra clumping. Adding a teaspoon or so of baking powder is another thing that really adds another dimension to the crispness. The batter will expand slightly as it hits the fry initially and creates even more surface area.

Allowing it to sit in the flour for that long actually allows gluten to form which makes for a more chewy and less glass like crust. Do the experiment yourself and see the difference.
