This was an opportunity to sharpen this particular steel. The forge is unique because only so many people can do it. The knife is a little thick and so I did not want to lose the profile or shape or anything about this knife. I am not good at polishing, but I am working on it. I wanted to put an edge on it, but I was very reserved and conservative. I used a myriad of stones, but in the end I could still work on my technique when it comes to this thick of a knife. We proved that we don't edit and we showed our human side. We did get better and we went back after the video to make it even better. I'm glad that I can show you that I can make mistakes, but in the end, everything came out great, and we are extremely happy. Thank you for joining us.

Yoshikazu Ikeda (池田 美和) started forging knives in 1967 as an apprentice to his father Kameo Ikeda (池田 亀夫), the 2nd generation blacksmith of Yoshikazu Tanrenjo. Whilst his elder brother Tatsuo Ikeda (池田 辰男) took over their father’s workshop and became the 3rd generation blacksmith, Yoshikazu Ikeda founded his own workshop Ikeda Tanrenjo (池田鍛錬所) in 1983. He once joked that his hands were stubborn and clumsy, so he wouldn’t feel bored doing the same thing over and over again. As a result, he laser-focused on mastering his skills in forging and crafting for decades, and captured many awards in Japan. Sakai Hokushin (堺北辰) is a line of products created by Ikeda Tanrenjo workshop.

Hi Greg, I prefer metal polish liquid with very low amount of abrasive materials. Which you can use for silver and so on. That's works great to remove patina and protects the steel for some time to darken again. Rust erasor are a no go on mirror finished knives.

You have absolutely no idea how much that means to hear you say. We have done this for more than three years. We have taken a lot of shit from people. Sometimes people are not nice. We have gotten better over time. It's something that we do out of habit and we keep looking for a new things for you. To have you say nice things is amazing. Good video Greg. You mentioned blade thickness and Ryan at District Cutlery. He does such a great thinning job. As per Honyaki and thickness, I definitely prefer one more of a razor and since I am careful when using them It is very rare for me to chip a knife and I do have some workhorses for tougher jobs. Thickness is the number one thing that has postponed my Honyaki purchase, as I really want to see the width of the blade before my purchase. I had a chance to pick one up when in Tokyo, but there were too many cool and harder to find blades/lengths that I spent my money on. Unfortunately I'm not sure if I will ever be back there on a business trip again. In any case Happy New Year and keep up the good work!

The Mizuno knife that I showcased after this video was very much thinner than this one so you can find a mirror finish Honyaki knife that is thinner and that might be the one you grab. Have you ever tried to sharpen knives on a Wicked Edge system? I sharpen all my japanese knives on it and I get a VERY precise angel every time. Its almost impossible to not make the edge round and weak when doing it by hand.

No, but I want to. We haven't really had the money right now. I definitely would like to because it would be very nice to have that precise Edge that you were talking about. Fortunately, I've been pretty accurate recently with my angles, and I've been very happy with myself. But it does take the worry out of it. I need to apologize for taking so long. Enjoying your video in Saudi Arabia. Sir thank you for being so informative. I lived in Japan but never had the resources to buy such great knives and stones. I am currently using my Pakistani knives which are made in the historical city of Wazirabad. Please try them if you have a chance. Would love to see how these knife would do on these Japanese stones.

Just curious and maby it's just for traditional purposes but whats everyone's obsession with polishing on stones. 2 or 3 compounds and a few different pads on a buffer or wheel and you have an absolute perfect mirror in no time. Does anyone know If the smith's are even using stones to polish or if they have all gone electric.

I agree with you that we live in a modern world and modern things are being done now. I think some people who are very interested in keeping things traditional would try to do it on stones. I'm a part of two different groups were people are learning how to do that. I would love to be one of those people and I will keep practicing, but a polishing wheel or buffing wheel with some compound is amazing. I've also heard they're very dangerous very dangerous. A work horse grind is good! You cannot hurt that knife! And it make no sende to turn every knife in a laser. Because you cannot do everything with such a knife. If you get used to - I love to use work horse knives. The food separation is much better, yes you get some wedging, but that is not that bad.

Greg, love your show. Had you started with a Chosera 800 and then moved up would you still try for a burr on the second stone too or just spend equal time on both sides on stone two and then progress? Also, where can i see what you have for sale? Keep up the quality content please sir!

Thanks for your patience with me. So my philosophy was to continue getting a burr on the stone that's around like a 1000 or maybe even up to a 2000 but really after that you're polishing the Apex. You don't have to keep doing it above 2000. If I set the Apex on the lower grit stone even if it's a 400 or a 500 or an 800 or a 1000 then I probably will just polish and not try to continuously remove metal and create a new Apex every time. The 220 is too aggressive in my opinion, 800 to 1000 would have removed less material and achieved the result?

I would normally agree. It’s just that it was that thick. I just didn’t have the time considering the video was already 47 minutes. The knife is still extremely thick.

The the slightly inferior results you got, was due to the natural stone finish - I think. You are used to finish on the high grid whetstones. And that's different.

I don't think so. I have gotten amazing sharpening on natural stone. I prefer it actually. The polishing was done on the whetstones and I am not proficient at that. I also don't currently on the buffing wheel because I heard they're very dangerous. I do need to learn how to use them, but I want to learn at all.

We did put a edge on this knife in a different video. It started perform well once we did that but I was a little afraid of it because of the mirror finish. But after the patina was on there, I wasn't so afraid of it anymore. I need to apologize for taking so long. I've had a surgery on my knee and some other things going on.
