Great video,have you ever tried deburring with a block of hard felt?Works great I deburr after every stone.

Thanks for the heads up on these grooming stones. I did not know about them. I've got a few Nano Hone stones and the 400 in particular seems to load up pretty quickly so I'm going to try a few of these groomers. Should be better than constantly using my Atoma plate, because that does seem to result in excessive wear on the stone.

Welcome back. Everyone needs to take a break sometimes. I’m curious as to which JNAT stone you’re showing. Does the Nano Hone groomer do a much better job than the Suehiro dressing stone and is it worth for ceramics?

Thank you. A lot of work over these years. We just had a surgery to cut all of our skin off. The extra skin is gone and it took a while to heal. It took a year and a half to lose all the Thank you. I only use my Naniwa diamonds with steel with vanadium carbide, mostly folders. With steel that can be sharpened with any stone I use my Shapton Kuromaku. At the moment I don’t have super hard kitchen knives so I save the diamonds for vanadium carbides…..to clean resin bonded diamond stones use a block of silicon carbide. The full size Naniwa diamonds come with one for each stone.

I clicked on this video to see how to use the stone. Ten minutes into it he's still blabbing and hasn't gotten to sharpening. A 30 minute video on how to use the sharpening stone? I gave up and gave it a down vote.

Don’t understand why Japanese word ふぐ引き is translated to: Fugubiki or Fuguhiki? Was it Hocho Knives website which coined the term (very SPAM-y, not very honest or very informative website for that matter)? ふぐ引き does not pronounce neither “foo-goo-bee-kee” nor “foo-goo-hee-kee”. It pronounces “foo-voosh-tee” or closer “fy-vysh-tee” (where “y” equals English phonic symbol “i”as in “bin”) which could be written simply: Fuvushti. That said, have to say love your videos. You are the only sharpener I know of who really informatively explained what perfect apex is. That was really awesome job! Thank You! ❤

Hello, First of all I want to thank you for the videos, tutorials, and sharing your time/passion. It is clear that you really have a love for stones, knives, and teaching and we as viewers are so lucky to have you as a mentor. And on that note... I was curious if you had a recent video (and if not maybe its a video idea as I shamelessly hope you'll do this if you haven't already and I just missed the video) that goes over your choices for stones to purchase for those on a budget for a complete set of stones (doesn't have to be the same brand, just what exact stone in each category do you recomend) then moving up to intermediate (what stones are good value for those in the intermediate world of quality versus budget), and then what if money wasn't an object what is your professional/dream collection with minimum duplicate grits. And what I mean by no duplicates is lets say you love the 3k chosera and the 3k Sharpton glass, you can only pick one so which would it be to build your dream collection of taking the best stone(s) from each manufacturer to create the dream collection. Your lighting is rather inconsistent. In some videos your look Irish. In others, Puerto Rican. The knives always look nice though...

The nakiri design is also seen in Korea in a nearly identical form (but usually with a full tang). It's the older design of the Chinese cleaver for centuries ago. The design evolved in China to be taller and always with a full tang (to support bone cleaving), but in Japan and Korea, it stayed as it was originally. Until the 19th century, the nakiri and deba were the only two kinds of knives found in Japan, one for veg, and another for fish. Another fun fact is that you will never find a Chinese cleaver made in China from carbon steel, alway stainless, and always soft steel, usually 56 HRC or lower. These are meant to bend and be honed and sharpened often. All Chinese families own a whetstone.

Just a thought, maybe lapping film on a supper flat machined bar. 3m makes lapping films that go all the way up to .1um that would be perfect to flatten this stone

You still need to sharpen the CCK. I have over 10 off them. When the 1303 carbon is sharped. Its as sharp as a scalpel.

Watching this while sharpening my Kato workhorse, my favourite in the kitchen and sharpening is really not something that needs to be done very regularly with this one.

61 HRC is painfull resharpening if u don't have a good set sharpening stone and sharpening skill. If u out of budget just buy a ten buck Tramontina sandvick high carbon stainless steel 56 HRC easier to maintain sharpness I can sharpen to cut tisyu paper easily.
