Breakfast quesadillas are a one-pan breakfast. We were inspired to make these from a viral TikTok video and our family loved them.

INGREDIENTS FOR 1 BREAKFAST QUESADILLA:
►1 flour tortilla (8” in diameter)
►2 large eggs
►Pinch of Salt and Pepper
►1/4 cup shredded cheese (Mexican cheese, cheddar or mozzarella)
SELECT YOUR MEAT/PROTEIN:
►3 oz Breakfast Sausage (2 patties)
►2 slices (2 oz) ham, chopped
►2 slices (2 oz) bacon, chopped

Just made these for the whole family since I didn’t have enough eggs for a traditional breakfast. It helped stretch the eggs out and was so delicious! I used to make these with normal scrambled eggs and they would always fall out. Thank you so much!!!

I wanted to let you know that I have tried the egg and cheese only I made it into a single.. I never knew how easy it was to cook the eggs and put the tortilla on top.. This is now my go-to breakfast recipe. Perfect after coming home from work early in the morning. I prefer making the bacon one but I also add sautéed mushrooms as well. Scrumptious 🤩

Tried the bacon version of these this morning and they were great, I added a little butter to the pan while browning the tortilla and it tased fantastic. Adding a little salted butter gives the tortilla a great flavour boost.

I made these this morning! They were so good. I was in a hurry so cut up some Canadian bacon that worked really well. Easy and fast to make. My kind of cooking! Thank you for sharing this recipe!!! I honestly didn’t think I’d like this because I like very fluffy eggs, but this was PERFECTION. I could have eaten 2 of them, but I’m glad I restrained myself. This will be a regular breakfast for me. THANKS!

Natasha, Natasha Made the first recipe 7-21-22 Had all the ingredients in the refrigerator. Had company over and everyone said they were hungry. So went to my laptop under Cooking and pulled up this recipe. Already had it there just didn't use it until 7-21-22 It was Simple, Fast, Very Easy and Filling. I made 4 had 3 ppl over. They inhale them. Each person got 1 and they said they were full. I did Sour Cream and Tomato Salsa on the side. They loved them. The last one I ate later, filled me up for the entire evening. This recipe has been saved on my playlist for awhile but needed something quick and different for suhur/breakfast. This recipe was great for the job, I had two and some pineapple tidbits. I went with some O’Brien potatoes with the egg and cheese instead of a meat this time. Will definitely keep this recipe in the rotation 👍🏾👍🏾

Hello Natasha! - How long can I store them in the freezer? - In a freezer Ziplock or plastic container? Which is best? - What is the method of reheating them after the freezer? Thank you. Loads of love ♥ EDIT: ok, just made those a couple days ago & they were pretty good. - Made of: Eggs of course, Bacon & Suisse cheese. - Kept some in a ziplock freezer bag. They did not stay there long. - Simply reheated them on my pancake pan. Like they were just freshly made, no difference. Thank you.
