You'll need
2 medium-sized zucchinis
1 medium-sized potato
1 onion
2 eggs
3 sprigs green onions
1/2 bunch fresh parsley
1/2 bunch fresh dill
1/2 bunch fresh mint
1/4 tsp ground black pepper
1 tsp baking powder
1 tsp red pepper flakes
1/2 tsp salt
4 tbsp all-purpose flour
For frying:
Vegetable oil
Here's how
Start by cutting the zucchinis into a few pieces and then grate them using the coarse side of a grater. Squeeze them by hand to remove excess moisture.
Peel the potato and grate it as well. Squeeze out the excess moisture from the grated potato.
Grate the onion and squeeze out its excess moisture.
Finely chop the green onions, fresh parsley, dill, and fresh mint.
In a bowl, whisk the eggs, salt, red pepper flakes, black pepper, baking powder, and flour together until well combined.
Add the grated zucchinis, potato, finely chopped greens, and onion to the egg mixture.
Gently fold all the ingredients together using a spoon.
Heat some vegetable oil in a frying pan over medium heat.
Using a spoon, scoop the mixture and carefully pour it into the hot oil.
Once the bottom side is golden brown, carefully flip the fritters to fry the other side until golden as well.
Once the fritters are nicely golden on both sides, transfer them to a plate lined with paper towels to drain any excess oil.
Repeat the frying process with the remaining mixture, flipping the fritters to ensure even cooking.
