You'll need
6-7 medium-sized potatoes
1 red pepper
1 red onion
1 tbsp finely chopped parsley
1/2 tsp salt
1 tsp red pepper flakes

Vegetable oil
Here's how
First, peel the potatoes and slice them thinly.
Soak the sliced potatoes in cold water for 10 minutes to remove excess starch. This will make the potatoes crispy.
Clean the inside of the red pepper and slice it thinly.
Slice the red onion into thin strips.
Drain the soaked potatoes and dry them thoroughly with a paper towel. Start frying them in hot vegetable oil.
Fry the potatoes until they turn golden brown, turning them occasionally.
Once all the potatoes are fried, place the chopped red onion, red pepper, finely chopped parsley, salt, and red pepper flakes in a large mixing bowl and mix well.
Add the fried potatoes to the bowl and mix everything together again.
Your delicious fried potato salad is now ready. Transfer it to a serving plate and enjoy!
