I used to use a Vitamix to grind my wheat. I kept the berries in the freezer and only ground 2 cups at a time. Worked great. Hubs gave me a Mockmill for Christmas.

I am a beginner with milling grain. I basically worked my way to this point; making my own sourdough bread since 2019 and perfecting it, using different types of flour, then researching how to go about in getting started in milling my own grains… I have purchased my grains (taking many tips and recommendations from your videos), and now, I am simply waiting for my Nutrimill Harvest to arrive 😃. Your bread recipe is VERY easy…I’ve made three loaves in the last two weeks with no issues…. I even halved it so the mix can fit into my small kitchenaid…. I appreciate all the tips on your channel!💕

I have the Mockmill 100 and I love it. As of today, Azure Standard has hard white and soft white wheat berries, but is out of hard red. They did have einkorn earlier this week, but they are out of stock again. These are crazy times. . .I didn't want to believe we were really getting into shortages. I would think you could use hard white to make cookies and cakes etc, especially if you sifted it some, since the world has been using sifted hard red for all-purpose flour for over a 100 years.

Yes you are correct, hard red is typically what is used for all-purpose flour. But freshly milled is a whole different ball game and even when sifted, you're not making it super light like store-bought all purpose is. As far as grain shortages, yes things are crazy. However, I think a lot of the shortages right now come from people panic-buying. Azure said end of March they have wheat they just can't clean and package it fast enough! Hopefully things will start to settle down soon :-)

I have a kitchen aid grinder but my husband buying me a hand grinder for Christmas it's from Mexico I watched your videos on making homemade tortillas so I wan to use it for grinding the corn after nexmalization it but corn was going to be one of my first grains but I found some wheat I wanted to buy

This last weekend I used my Vitamix and made a single loaf of wheat bread. I feel like I'm making progress and I did not have to buy a mill. Also, the Winco near my house sells grains by the ounce. For less than $4 I was able to get started.

I want my Vitamix grain blender to work so bad. It just doesn’t get it fine enough. Wishing I had spent the money on a wheat mill. Any pointers?

@@theverch1 I have a regular Vitamix. I think they sell a special blade for grains, but I just use the basic blade and it works well. Sorry I don't have any specific tips.

@@theverch1 I have ground flour successfully in the Vitamix but only in very small amounts. Make sure you're using the dry container and don't do more than 1/2 - 1 cup of grain at a time. I would maybe even pulse it, shake the container to mix the grains, pulse again, and repeat until it's fine enough.

I use the leftover flour for cookies often and it works really good for me. I bake a oatmeal raisin cookies. For me there really was not a utube or anything I just started out with hard white wheat berries and did not know about the soft wheat berries so I just made many mistakes and learned a lot by trial and error. With the whole wheat it was a lot of mistakes but most where edible and some turned out to be favorites and I had to learn how did I do that!

Luckily I found your bread recipe just as I started this wheat grinding journey. It worked perfect! I usually have in the past had trouble with my loaves rising but your recipe was perfect first time. I did cut the amounts in half because I wasn't sure if my kitchen aid could do that much, and also I don't need that much at one time😄. Great recipe!

I found you a week or so ago, and have loved every video! My Mockmill 100 should arrive some time today! In the meantime the last week or so, I have twice ground wheat with a Ninja Foodi blender….not quite fine enough though, because both times my bread was like a brick! Haha! Tasty but dense! I can’t wait to try when my mill gets here! One thing I have a question about is, if you loose nutrients when milling heats the flour too much, wouldn’t baking the loaf do the same thing? Whatever the answer, I’m still excited and also so happy I haven’t had any ill effects after being “grain and gluten free” for about 8-10 years! I have also been processed food free as well. So excited!❤ Thank you!

I am glad to have found your channel. I have a couple of tubs of wheat (low O2, packed by Pleasant Hill, good for years) that I picked up during the pandemic lockdown, along with a KoMo Mill. Through the lockdowns, I was able to continue baking using a variety of King Arthur and Heckers commercial flours, so I didn't need to open and mill my wheat. The lockdowns coincided with a protracted downsizing, sale of our 30+ yrs family home, a temp rental and now our permanent retirement home. Being settled now gives me the time to work with the wheat berries and I am about to crack open the first tub. I am starting to work my way through your videos and appreciate them. One thing - does home-milled wheat respond well to the various no-knead approaches, or do they actually require kneading?

I do like kitchen tools but I also feel like if something can be done by hand effectively then that is what I do. I have a basic rustic bread recipe that is hard to get wrong and I use no fancy equipment. Done by hand. I have not yet done milling but I do have a manual grain mill I am going to try out this week. I can add a motor to it if I find the manual process to be too much.

Soooo excited! For so long I have been looking to get into milling my own grain. Purchased a Mockmill 100 (out of the box but I now have to put some rice through it per the instructions before i can officially grind my first wheat berries!). I was able to purchase both hard red AND soft white wheat berries this week (Thank you Wildwood Natural Food Store here in Georgia and Breadbeckers ALSO here in Georgia). I think I'm going to start with your bread recipe you mentioned here. I am also on the lookout for how else to use these wheat berries. Just found a tasty looking recipe from Clean and Delicious using cooked wheat berries, spinach, scallions and a yummy sounding dressing. Think I'll try that for a dinner this week too! Do you have any recipes that use whole grains that don't require milling into flour? Have an amazing day!! God bless you! So happy to have stumbled upon your channel.

The MockMill 100 is great! I hope you enjoy it. I don't know about others, but I grind my bread flour as fine as I can and even the fussiest of opposing people love it. I do a whole grain mix of 50% hard red and 50% hard white for my bread. Good luck with your new mill.

@@HelpatHomeJim Thank you! I like your 50/50 tips as well. I just ground some hard red wheat last night (on setting 1) and added it to my sourdough starter. I am not sure if I should be putting it through the mill more than once or not? It did have a more grainy texture but I wondered if that was just because it is actually the whole grain. I'm thinking you can't expect the texture of white flour but I did wonder about just how smooth I could mill it.

@@beckykarson6306 I have the Mockmill 100 stone grinder and I adjust it to the point the stones make a "sound" and then I grind at that lowest setting (1). There is a little bit of grit due to the wheat bran and germ etc. but I don't really notice it when baking. You can always get some flour sifters from Amazon and sift a little of the bran and germ out. I have a #40 and #60 sifter. The larger the number, the more it sifts out. What I tried was sifting half of my bread recipe flour on the #40 twice and my wife thought it was the best I ever made. My recipe also uses 1/2 cup of honey. People forgive a lot of things where there's a little sweet involved ;)

I don't have one go-to basic recipe book I can recommend because there aren't any out there and the ones that are can be a bit overwhelming to newbies. The closest one I can get is Sue Becker's The Essential Home Ground Flour Book, but I don't use her basic loaf recipe and I haven't tried all of her recipes.

I found your bread recipes. Thx! Was trying to find two good loaf pans but found lots of reviews on Amazon complaining of non-stick pans that peel, come of on your bread. Do you recommend some loaf pans that don’t have nonstick coating?

I like Nordic ware pans. Have found them before at Walmart. Also sometimes find good pans at HomeGoods stores. I'd go with the heavier and darker pans since the crust gets darker. Maybe you can compare to what King Arthur Flour company sells. They make a great loaf pan, but may be expensive.

Question: I just got a nutrimill harvest and my husband says it isn't grinding the flour fine enough, but if I tighten the knob past the "grinding sound" I can smell something burning. Have you found that the impact mills grind flour finer? Or am I doing something wrong?

Maybe you need something to soften the wheat like a couple of tablespoons of cooking oil or perhaps something to bring all your ingredients together so they're more cohesive and not dry/sandy, like liquid Sunflower Lecithin (one tablespoon per loaf of bread dough). I also found that many people just can't handle a single whole wheat home bread. Mixing two types of wheat can give you a more pleasant loaf than just one. I do 50/50 hard red/hard white. Nobody complains of gritty flour :)

I watched your video where you made some bread. You indicate that the yeast needs to be proofed. Can you use instant yeast or do you have to use the regular yeast.

Do you need to put the wheat berries in the freezer for four days to get rid of any possible pests? (Saw this on a different channel). Do you ever sprout your berries for wheat grass? I think my daughter would get a kick out of that for her smoothies. Would freezing kill the berries so they don’t sprout?

Freezing doesn't kill the berries, just any bugs. Berries are seeds like any other seed! They freeze well, but can still be sprouted and grown after :-)

Hi im just about to grind up! but finding it a chore grinding when i need a loaf, because ive heard its best so the flour is fresh! my question is, how long would you keep the flour for?! if i was to do a load. ty

Not too long. In 24 hours flour has already oxidizes a bit. But I have milled the night before and stored the flour in my fridge or freezer no problem. I do this when I’m baking something for breakfast but don’t want to run the mill. The flour won’t go bad for several days but by day 3 over 90% of nutrients have been oxidized out so it’s not as beneficial nutrient wise.

When I click on the links for your favorite items like the bread pans and any time it takes me to Pleasant Hill website it doesn’t show any specific items so I still don’t know which bread pan etc. that you like or which mixer because it just takes you to the website but not the page with the item and so I’m curious if you could share the brand name of your favorite loaf pan and which exact mixer that you recommend and I’m really struggling to decide between the Green meal‘s as well. I’m so so excited I ordered some hard white wheat from Azure in my very first order that I’m picking up on Thursday and it said it was out of stock and likely wouldn’t ship and it did and I’m just feeling like it’s a sign And a blessing that I’m headed in the right direction and following what I feel God put on my heart. And then so I have some of that on the way but I’m really struggling to choose a green mill people rave about the Mockmill and nutrimill but I’ve read a lot of people share that the Neutra meal doesn’t grind it as fine as they would like and I’m just curious since you have both listed as favorites on the comments of this video if you prefer one over the other. I do really love to make biscuits and piecrust but I really wanna learn how to make a good basic bread like you said where I can make bread for sandwiches and buns because we have to pack lunches with sandwiches a lot on our farm and my daughter is homeschooled and we do sandwiches for hikes and outdoor school a lot too. Thanks! And I just have to say I’m so happy I found your channel. I was getting ready to place my first as your order and I found one of your videos on one of your halls and I was mostly watching to see what people order regularly what peoples favorite items were before I place my first order any year ago I didn’t think that ever buying wheat berries would be for me but I feel like it’s something I’ve been called to learn about and do it so I’m super excited to have some on the way my dream is to get a hold of some of the soft white heirloom wheat berries from Azure that are out of stock because I love making biscuits and pancakes those are probably too cold hurts and piecrust and I am kind of a snob up until now I always would use a special pastry flour and I always tell they could be my pie crust the best and so I’d love to learn how to make my own soft pastry flour. I don’t really enjoy baking sweets because I don’t enjoy eating them but my daughter really wants to bake more and her and daddy loves cookies and I am more light to make pie crust biscuits pancakes and I want to learn how to make all kinds of bread even sourdough and multi-green but I love your advice here where you share to just get good at making at one basic recipe so that’s what I’m gonna focus on for now

I have very little counter space. so can not leave my mill sitting out all the time. Can I mill enough flour for several baking sessions and freeze until I am ready to make my bread?

I firmly believe bread should be a daily affair. But milling a double batch and freezing half probably won't kill you ;-)

Got a uni-mill..now I just need a good recipe. The breads I have been making with the hard winter wheat is very dense..Is this normal for whole wheat. I guess I was expecting something more along the lines of wonder bread...🤣

I am 79 and I take care of my hubby who has dementia and it is not always possible to make bread everyday or even evert other day,

What category would spelt and kamut fall into? Is it okay to grind my wheat the night before and store in the frig for morning baking?

Spelt and kamut are ancient grains. And you can mill the wheat the night before and store in the fridge, but I would actually store in your freezer to slow down the oxidation even more. I do this on occasion when I'm going to be making something in the morning and don't want to wake the dead up with my mill going lol

@@ASmileAdayful I don't. I just use it when I need it. If it's for a yeast bread, make sure the liquid is warm to warm it up :-)

Newbie here… I was able to get a refurbished NutriMill grinder… I was able to get hard red and a hard white wheat berries… what can I do now.. family is picky must be a soft I’m only interested in loaf bread…. biscuits hamburger buns and hotdog buns pizza crust.. Do I grind fine or Medium or does it depends?? Need to ease my family into this.. which mean I will not tell them until after the fact..

Just grind you some fine flour and make that yeast bread! You can use the hard red or hard white, or a mix of both for a yeast bread.

Yellow popcorn makes a wonderful cornbread. White kernels are good but the yellow is my family's favorite. I also love rye wheatberries for rye loaf bread. Have fun.
