Ingredients: 650+250grams of bread flour, 300ml+200ml of water Yeast 180g sugar, 1/2tsp ascorbic acid 1tsp salt Instructions -mix together 650g flour, sugar, salt, ascorbic acid. -warm 300ml of the water. add the yeast to this and leave for 10mins (this to check if the yeast is alive) -after 10mins, add the yeast-water mixture to the flour-sugar mixture -as you knead in the mixture add the remaining 250g of flour and 200ml of water - knead for 15mins. If you have an electric mixer now is the time to use it. -proof the dough in a large oiled bowl for 1-2hrs -knead proofed dough for 5mins. Then shape/roll it. Place in oiled pan -proof for another 1hr. -place in preheat oven to 180°C for 30-50mins. *My notes from making this: - you can use all purpose flour it will still yield agege bread. -add about 50g margarine to the dough when almost done with the first knead. This is just to add more flavor to the bread. -Ascorbic acid is essentially to this recipe. I tried it without it an did not have that agege-ness. - if you don't have a pan with a lid, the bread might brown too quickly and turn black to prevent this I cover the pan with the dough inside loosely with aluminum foil. This prevent Browning. When I am sure the bread is almost ready I remonlve the foil and leave the bread to brown. - to be sure the bread is ready, it will sound 'hollow' when tapped from the bottom. But for me it usually takes about 30-35 mins. Hope this helps guys enjoy your agege bread.

My husband hates when I experiment on him with my cooking, but he loves my cooking and won't eat anyone else's at all, his plate is always clean, however I wish sometimes I can rest and have him even boil me an egg, which he won't do , I watch your bids and dream dreams that one day he'll surprise me lol. I've been baking bread for him now but he always craves for agege bread so I'm gonna be super woman in his eyes when I surprise him with this, thanks so much for posting this Oga!

Ebyehigiator....Thanks for leaving your comment. I know how we men love cooking done from women, however , I am from the school of though that women are not wood or kitchen servants. Men should support their wives in cooking incase they are sick, pregnant or tired after a long day. A friend of mine that I know can cook very well when we were at Uni that is now married, once told me that if his wife knows he can cook, she will always be tired every day hereby leaving him to cook for the family... heheheehehehe .However, i do genuinely believe that some men cant cook at all just like your husband. Please prepare him his favourite AGEGE bread and I am sure one day , he will stand up to boil you the egg you crave from him. Please keep me posted when that romantic day comes. half-ass making food......not trying to be negative or anything, but he probably not boil you that egg if he won't do it knowing you are tired. Its a simple egg. Its kind of sad that what you have to wish for...is a boiled egg and he can't do it. He won't surprise you and if he does it will be one time or can be counted on one hand. While you're here looking for anyway to please him. Such women are interesting, they believe change will happen for the better, but they are mistaken and find themselves hoping for very little from their "man". Too bad, I never want to be like that....I'd half-ass it and save the best for myself. Gotta find a way to make it work for you.

I made two attempts prior to your video and they were nowhere near a Jamaican bread, (I'm Jamaican) the texture inside was really dry. I tried your recipe with all purpose flour and the ascorbic acid (got it on amazon) and I can truly say your recipe is AMAZING!! THE BEST EVER!! My bread was perfect. THANK YOU SOOO MUCH!!

The universe is at its best.... everything lines up in order. Me self go cook beans today and got ready made shito in my fridge. I've made bread with flour but don't use sugar gave it up years back. Since I am wheat intolerant got coconut flour and will do this. Luckily I have plenty of power vitamin c at home.

I've been baking my own bread for about two years because all the commercial additives e.g. bromates started showing me "ten fingers" and landing me in hospital every time I blinked. Your take on Agege bread is SUPERB.

I am also American, Although this looks very good. I had never heard of this kind of bread and thought about making it. I just hope you can buy the ascorbic acid at Walmart or something. I am going to have to convert the measurements also, but this looks like a very yummy bread, and me being a bread lover, I will try it out and let you know how it turns out. I love this guy. He is hilarious. But please leave your address as I am too lazy to go through this process. But I must try this sometime. I actually looked it up because the other day I went to buy bread at an off license store & the middle eastern store keeper was cleaning his teeth with a toothpick & his hands were hitting against his open lips. By the time he finished wrapping the bread, it was hard for me. Each time I cut a slice, I would feel repulsed but I was desperate for bread that wasn't Warburton or Hovis. My people it is called 'longer throat' but it will not happen again (so help me God). But please send some to my place. I am serious. (Crying). Lol.

For hygienic purpose use maybe a small spatula to level the spoon measurements and remember not to wear long sleeve so that you don't have to be adjusting your shirt all the time but its a good video

Excellent! Many thanks for uploading this video. However, be careful with sugar content. It is just too much for me. Delicious even more when milk and two eggs are added to the recipe. This recipe also works well without ascorbic acid. Also, be careful the yeast may not be activated if the water temperature is too much for activation. Water at room temperature works pretty well. Lovely, is there reason to knead the dough and let it rise twice? The local bakery do it once and let it rise for 4hours

Allowing it to rise twice makes for a finer bread with less gaps or holes in the bread. Most commercial bakeries are pressed for time and with the equipment they have and experience they can achieve a much finer bread without proofing twice.

Odife Abimbola Hello dear. I use to have difficulty with yeast also.one of the reason why yeast don’t activate is either because I the water is too hot or cold. To get the right water temperature to activate yeast. Boil water for like 3 minutes or turn off the heat before the water start to stream up. You can even dip your finger into the water ( I do that all the time 😀)The water should be warm/hot but not hurting your finger (hot like a water you can use to shower) and make sure you set the yeast aside to rise. And if it didn’t not rise. Buy a new pack of yeast. Yeast has expired date. Rules- Don’t touch the bowl or shake it while it the yeast is proofing and after you add flour. Like it sit for up to 2 hours before checking it. And I will advice you to cover the water with a light towel or a plastic warp. I hope this help. Blessing
