Liz from Night Owl Crafts Australia shows how to make Gem Scones.
Instructions for the gem scones:
Heat irons or mini muffin trays in a 200 degree Celsius oven
Cream 40 gram butter with 1/3 cup castor sugar
Add flavoring - e.g.vanilla, lemon or orange peel
Add one beaten egg
Mix well then add,
1 1/2 cup self raising flour and 1 cup of milk a bit at a time and mixing well between additions
Add a small amount of butter to the hot gem irons or mini muffin pans
Then fill about 3/4 full with the scone mix
Cook for 10-14 minutes or until lightly browned.
