You can make tabbi socks from regular ones by first fine stitching a v shape to separating big toe from the rest, and then cutting down the middle of the V. There’s even a video showing how to do it on KZfaq.

I owned a pair of those Airjog jikatabi, and they're really great for all day wear. Thanks to more lax dress codes in retail these days, I wore a pair of these for over a year at work; I'm on my feet for a full 8 hours every day, and my feet never hurt once when I was wearing them.

Our dojo generally its Tabi Socks, we would do essentially a starter pack in our store which includes, Gi/obi/tabi socks/club tee/club patch. But we generally train in socks, some would have tabi boots, but very few. We have no restrictions really, other than no shoes (that are worn into the dojo, so everyday wear shoes) on the mats. You can always use longer strips of cloth as puttees/legwrappings too; its a thing used from antiquity to nearly the modern age, only dying out with modern materials, industry and consumables.

When I first started training back in the early 90s it was hard to find nice tabi (pre sites like eBay, Amazon, etc.) and they were pretty expensive. I was going through several pair every year. The rubber sole would always separate from the canvas upper, and it seemed the canvas upper would last substantially longer than the rubber sole anyways. When the rubber would begin to separate, I would take the rubber completely off using a hot hair dryer or heat gun, use it as a stencil on leather, then cut the leather out. Id then sew the leather on to the bottom of the canvas tabi, normally smooth side out if I wanted to be able to move on the mat more fluidly, rough side out if I wanted a little more grip. When the leather wore down, I'd just remove the stitching and make another set and sew them on. This saved a lot of money over the years.
