Ingredients:
For the crust:
200g (7oz) biscuits
1/3 cup + 1 tsp (80g) butter, melted
For the filling:
300g (10.5oz) Blueberries, fresh or frozen
2 tablespoons (25g) Sugar
2 cups (450g) Cream cheese
2/3 cup (160ml) Heavy cream
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 cup (125g) Powdered sugar or less if your blueberries are very sweet
10g Gelatin powder
50ml Cold water
Topping:
7g gelatin powder + 35ml cold water
180g (6.5oz) blueberries, fresh or frozen
2 tablespoons (25g) sugar
70ml water
Directions:
1. In a food processor or a Ziploc bag crush the biscuits into fine crumbs. Add melted butter and pulse until combined. Press into bottom of 8-inch (20cm) springform pan. Refrigerate while making the filling.
2. In a small saucepan, heat blueberries, lemon juice and sugar. until sugar is dissolves and the berries softened. Blend until smooth. Let cool.
3. In a small bowl stir gelatin powder and water. Let bloom for 10 minutes.
4. In a large bowl beat cream cheese until soft and smooth, add heavy cream, vanilla extract and beat to soft peaks. Add chilled blueberry mixture and mix until smooth.
5. Melt the gelatin in the microwave for 15 seconds. Temper the gelatin: Gradually add few tablespoons of the cheesecake mixture into the dissolved gelatin and stir until combined. Pour back to the cheesecake mixture and mix until combined.
6. Pour into the springform pan, spread evenly. Freeze for 1 hour while making the topping.
7. Blueberry jelly: In a small bowl stir gelatin powder and water. Let bloom for 10 minutes. In a small sauce pan place 180g blueberries, water and sugar. Cook over medium-high heat, stirring occasionally until the sugar is dissolves. Remove from heat, blend until smoot. Add bloomed gelatin and stir until the gelatin is melted and incorporated. Let cool to room temperature and pour over the cake.
8. Refrigerate the cake overnight.

ShadyNasty 99 I think he lives in Brazil, and so do I. Brazil is a tropical country, and fruits like blueberry, that are typical from cold countries such as USA, UK, etc, do not even grown here. It’s really difficult to find, and when we do, it’s way too expensive.

I tried this cheesecake for my husband's B'day. It came out fantastic, amazing texture and yummy taste. Thank you for this recipe. For the gelatine part I had to use hot water, cold water didn't work for me but the cake was beautiful! 👍

Thank you so so so much for this video recipe! I just had something similar to this from whole foods and I was thinking about making it and your video just happens to pop up... It was meant to be!! I think I'll be doubling that top gelatin though, it might just be the best part of the cheesecake!

My 16 year old son made this twice and he accidentally used salted graham crackers. It was so unusual to have salty and sweet...very nice recipe! We now make it with Graham crackers all the time. Thank you for the recipe.

The Cooking Foodie , where did you get the implement you used to flatten out the cheesecake crust? I usually use this one nice flat-bottom drinking glass I have but I would rather use something better than my glass. The cheesecake looks yummy.

U could have easily skipped one step of again reducing blueberry and sugar by removing some aside before adding it into cream cheese and heavy cream..

That recipe is a great idea. I will make that soon. I personally will change it a bit. I wouldn't use even more blueberries with even more sugar. I would split the 300 gramms into 1/3 for the top and 2/3 for the wipped cream/ cheese cream mix. I also would cook the berries longer so that there is no reason for using the blender. I'm also not sure if it's neccesary to mix the whipped cream/ cheese cream mix for so long. The soft peaks were gone when you poured the blueberry mixture in it.

Actually I made this cheese cake a couple of days ago with little differences. I barely used any sugar ( only 2 table spoons in the filling and also 2 tablespoons in the topping) and result was still delicious.

@@DannyDiablo1013 yes but the gelatin is what keeps it firm and simulates a cheesecake. You cant just serve someone raw cookie dough and call it a no bake cookie you have to simulate the same textures and flavors you would get from a baked on and the gelatin is part of that

@@thiccychiccy1157 yes you can gelatin does nothing to the cooking process except the texture and when you think of a cheesecake its creamy and smooth. Gelatin will give it a bounce texture. And baking anything at all in dessert makes it a baked dessert. It's in the name. No Bake. Means no oven no cooking
