These delicious No Bake Mini Cheesecakes are super easy to make. Creamy, smooth, and rich with a graham cracker crust, they make a perfect individual-sized dessert that's to die for.

------For the crust------
* 1 cup graham cracker crumbs
* 1/4 cup golden brown sugar
* 1/3 cup pecans finely chopped
* 6 tablespoons unsalted butter melted
* 1/4 tsp cinnamon
------For the cheesecake filling------
* 8 oz cream cheese softened
* 2/3 cup granulated sugar
* 1/4 cup sour cream
* 1/2 tbsp fresh lemon juice
* 1 tsp vanilla extract
* 1 cup heavy cream 36% fat or higher

📃📄📃📄📃INSTRUCTIONS 📃📄📃📄📃📄
1. First, make the crust: In a large bowl, combine 1 cup of Graham cracker crumbs, 1/4 cup golden brown sugar, 1/3 cup finely chopped pecans, 1/4 teaspoon cinnamon, and 6 tablespoons of melted unsalted butter.
2. Line a cupcake tin with cupcake liners and evenly distribute the crust between 12 molds. Making sure to press down firmly.
3. Bake the crust for 5 minutes at 350 degrees Fahrenheit. This step is optional but recommended.
4. In the meantime make the cheesecake filling by combining 8 ounces of softened cream cheese with 2/3 cup granulated sugar using an electric hand mixer. Once it’s well combined add 1/4 cup sour cream, 1/2 tablespoon fresh lemon juice, and 1 teaspoon vanilla extract. Beat it with an electric hand mixer until smooth and creamy.  Then set aside.
5. In a separate bowl, use an electric hand mixer to beat one cup of cold heavy cream until stiff peaks form. Make sure the heavy cream is 36 % fat or higher.
6. Now mix the heavy cream into the cream cheese mixture using an electric hand mixer. 
7. Pour the cream cheese mixture into a disposable piping bag fixed with a round piping tip. Snip off the tip and fill it into each crust filled shell. Top with your favorite berries and refrigerate for about 4 hours.

Thank you! We use a cannon 5D mark 4, and cannon 60D, and EOS R, with a canon 100mm macro lens and a 24-70 zoom lens.

What can I substitute for the pecans? We need a nut free option. Or can I just leave them out? Thanks.

Hi Alma, if you can't have nuts then it is ok to just leave them out. You can just increase the graham crackers in the crust :) I hope you love these mini cheesecakes :)

@@SimplyHomeCooked Thanks so much. I just covered them in the cupcake pan they were made in to refrigerate them and it worked out well. BUT ... I learned NOT to top them with strawberries until AFTER I removed each little cheesecake from the pan... MUCH easier to get out of the pan that way, since they were still a little soft. My tea party guests really enjoyed them. Thanks for sharing.
