No-Bake Pumpkin Cheesecake - the perfect cheesecake for the fall, thanksgiving and holiday season. This cake is so creamy, light and delicious, a must try recipe.

Ingredients:
For the crust:
200g (7oz) biscuits
1/3 cup + 1 tsp (80g) butter, melted
For the filling:
2 cups (450g) Cream cheese, room temperature
3/4 can (320g) pumpkin puree - canned or homemade, unsweetened
3/4 can (10.5oz/300g) sweetened condensed milk
2/3 cup (160ml) Heavy cream
1 teaspoon vanilla extract
10g Gelatin powder + 50ml cold water
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
Directions:
1. In a food processor or a Ziploc bag crush the biscuits into fine crumbs. Add melted butter and pulse until combined. Press into bottom of 8-inch (20cm) springform pan. Refrigerate while making the filling.
2. In a small bowl stir gelatin powder and water. Let bloom for 10-15 minutes.
3. In a large bowl beat cream cheese and sweetened condensed milk until soft and smooth. Add pumpkin puree, spices and beat until combined and smooth. Add vanilla extract, heavy cream and beat to soft peaks, 2-3 minutes.
4. Melt the gelatin in the microwave for 15 seconds. Temper the gelatin: Gradually add few tablespoons of the cheesecake mixture into the dissolved gelatin and stir until combined. Pour back to the cheesecake mixture and mix until combined.
5. Pour into the springform pan, spread evenly and refrigerate overnight.
6. Decorate with whipped cream (optional).

Run hot water over your knife for clean slices. Also, good idea to do said same and run around the edge before popping the spring mold. I am going to try this soon, if I can find some pumpkin puree...

Make sure you don’t forget the Gelatin!! It is the only thing that will solidify this cheesecake recipe. So if your cake turns out runny…either you forgot the gelatin, or didn’t use enough. Happy baking.

I am three years late, but I just want to say that I baked this and it came out so good. My whole family loved it! Definitely will make it again. Also I would recommend putting a bit of brown sugar in it to just make it a bit sweeter. I did have to substitute a few things, but overall it came out so good 10/10 totally recommend.

Can I replace pumpkin to smashed banana? (I don't think my family would like pumpkin). Then how much condensed milk should I use? What else I can replace to pumpkin?

Hi, I don't think mashed bananas would work here. I know pumpkin can sound strange in a cake, but I highly recommend to give this a try. If you still want to replace the pumpkin, try a mango or some other fruit that you can puree.

THIS RECIPE DOES NOT WORK! I followed step by step and refrigerated overnight and the cheesecake DID NOT get firm. What a waste...

3/4 of a can? What the hell kind of measurement is that? What do you do with a 1/4 can of pumpkin puree? This recipe is stupid and wasteful.

320 grams if you looked, and there's plenty you can do with pumpkin purée

You could always use a bigger form and take all the ingredient divided by 3, times 4. That way you don't waste 1/4 can of puree or kondensed milk... BTW, I would just munch on the remainder 😄 (The puree, not the kondensed milk 😆)

You can mix it into vanilla ice cream..... i used to work at dairy queen and thats what they add to their ice cream to make pumpkin pie blizzards- i always skip the stale pie crust pieces they put in it also ask to have the pie pieces not added in my banana cream pie blizzard btw banana cream pie is just bananas and banana flavored pudding powder 👍👍😍
