Today's recipe is for crispy cookies that are easy to mix.
The rich taste is achieved by adding vanilla, which enhances the flavor of the black sesame seeds.
I used rolled oatmeal (larger grains), but it can be made the same way with quick type or other finely cut oatmeal.
▷Ingredients:
6 tbsp (36 g) oatmeal
4 tbsp (36g) rice flour
1 + 1/2 tbsp (18g) black sesame seeds
1 + 1/2 tbsp (12g) cane sugar
Pinch of salt
1/2 teaspoon baking powder
2 tbsp (28g) oil
1 tbsp. water
1/2 teaspoon vanilla extract
▷How to make:
1. add all ingredients and mix. If the mixture does not hold together well, add 1/2 tbsp. of water to adjust the consistency.
2. Roll out the dough, flatten and bake in a preheated oven at 170℃ for 20 minutes.
