No-knead ! No machine needed ! Anyone can do it successfully ! | No Knead Whole Wheat Bread
Crispy on the outside, soft and chewy on the inside, this is a sugar-free, oil-free, healthy and super delicious whole-wheat bun, 50% whole-wheat, full of wheat flavor, you can eat every bite Sweet nuts, the more you chew, the more fragrant. For breakfast, heat it with toaster until golden on both sides, fragrant and crispy, so satisfying.
The making process couldn't be simpler, no machine required, almost no hands-on, only three times in total to fold the dough, and the rest is left to time, allowing the gluten to form while standing, allowing the dough to slowly ferment and be full of flavor. If you are at home all day, it is very suitable to make this bread, because it hardly affects your daily life, you only need to take a minute to fold the dough, and what to do with the rest of the time, The whole production process is like a spring breeze. If you don't have a stand mixer, bread maker, then this recipe is for you, no need for anything, it's that simple.
Material / Ingredients:
High-gluten flour ( bread flour ) ……………… 125g
whole wheat flour.....125g
Water ( water )....................................198g
Yeast (yeast)………………………… 3g
Salt (salt)…………………………………3g
Raisins ............................................... 40g
Pecans (pecan) ............................... 40g
Bake at 420°F (215°C) for 25 minutes.

Tips:
1. The basic fermentation can be done at room temperature, or it can be refrigerated and fermented overnight in the refrigerator. You can flexibly arrange it according to your own time, and the fermentation can be 2--2.5 times larger.
2. When folding the bread, remember to wet your hands first, so that it will not stick at all.
3. When shaping, the movements should be as light as possible, and do not squeeze the dough hard. We need to retain the bubbles produced by fermentation in the dough, so that the final bread will be fluffy and have irregular holes.
4. Please adjust the baking temperature according to your own oven. The temperature should not be too low. We need the bread to be crispy on the outside and tender on the inside.

嚼劲不够的话,面团可以多折叠几次,夏天天热的话,静置的时候放在冰箱里,多做几次,一定会越来越好

用厨师机揉面就要相应减少水量,用揉面替代手工折叠和静置的时间,揉好进行第一次发酵,然后整型,二发,然后烤制。就像普通面包制作一样

一次发酵大概27度左右,适度75%左右,发酵到面团两倍大

But you wrote Whole Wheat bread then why bread flour? How to bake in a simple small oven as my oven is small in size and it does not have fan? How can I create or give steam while baking without spraying water?

Small oven would works if you tune up the temperature, there is one way to give steam, preheat along several baking usage stones, spray water over them when you put in the beard, hope this answers your question :)

谢谢回复。昨天试做了用黑麦面粉取代全麦粉,整个面团很粘无法整形,可能水量要减,但是烘出来面包里头是软的,味道还是不错的。😅

顺序应该是,先折叠三次,再冷藏发酵一夜。因为是免揉,所以折叠的过程就相当于揉面,发酵以后就可以整型,二发,烤制了。

@@estella7038 看你家的室温哦,我的室温21度,大约二发需要90分钟左右。每家的室温不同,酵母活性也不同,所以还是观察面团的状态,发酵到接近两倍大小就好。面团从冰箱里拿出来大约4度,让它在室温下回温到大约15、16度,再来操作,如果有发酵箱,在发酵箱中35度发酵60分钟。

如果可以的话,保持湿度80-85%,比方在烤箱中放一碗热水。但也无需过分严格,这个面团本身湿度大,即便不加湿度也不会影响成品
