No oven! Delicious pie with cottage cheese and strawberries
To make a no-bake pie with cottage cheese and strawberries:
* Mold diameter 20 cm
The foundation:
Cookies - 300 g
Butter - 100 g
Vanilla sugar - 1 tsp
Zest of 0.5 lemon
A pinch of salt
Filling:
Curd 9% - 500 g
Cream 20% - 120 g
White chocolate - 150 g
Strawberry layer:
Strawberry - 150 g
Sugar - 2-3 tablespoons
Water - 50 g
Cornstarch - 1-2 tablespoons (the more starch, the thicker)
Lemon juice - 1 tablespoon
1. Grind the cookies. Add vanilla sugar, a pinch of salt and lemon zest. Mix. Add soft butter. Mix well.
2. Put the cookies in a mold, form the bottom and sides, tamp well with a glass.
3. Place in the freezer.
4. For the cream: heat the cream. Pour the cream over the chocolate and let the chocolate melt. Stir until smooth.
5. Grind cottage cheese with a blender, add cream with chocolate, grind with a blender until smooth. The cream is delicious! Place the cream on the biscuit base and refrigerate.
6. For the strawberry layer: cut the strawberries into cubes, add sugar to taste, lemon juice, cornstarch (the more starch, the thicker it will turn out), water. Mix. Cook, stirring constantly until boiling. The sauce should turn red. When it boils, cook for another 30-60 seconds so that the starch is brewed. Allow to cool until warm.
7. Put the strawberry layer on top of the curd cream. Decorate with fresh strawberries.
