I had to listen twice when he said " I put a little sauce on it, but it just rolls off them like ( like water off a ducks back). I thought he said like water off a nut sack 🤔

Does the fresh wood smoke overly affect the meat or does in not effect it too much? I understand firing down to coal, every 15 - 20 minutes makes for a very long 12 hours.

Fresh wood smoke is too facetious and acrid. If you want to cook directly over wood let the wood burn some first. My experience.
